Tuesday: Pulled pork tostadas
Wednesday: Fish cakes and salad
Thursday: Mini burgers, cous cous salad, and homemade hummus
We live the same condo building as friends of ours and each household cooks for the other one night a week. We don't usually eat together, we just drop the meal off once it's ready. So, we will cook the mini burgers and cous cous for them, and they will cook one night for us!
I suck at food things. Except, ya know, eating it.

Cheesy chicken with peppers, vegetable, your favorite bread (bread and butter, rolls, garlic bread)
You need:
1 lb box of rotini noodles (or your favorite shape)
1 lb chicken breast cubed
Peppers and onions (I buy the frozen bags of 3 pepper and onion blend because I'm lazy I use about 1/3 a bag)
16 Oz velveeta cheese block cubed
Milk 1/4 cup **(I gave my best guess but I don't measure)
Butter/margarine 3 Tbs **(my best guess but I don't measure)
Corn (or your preferred vegetables)
3 cheese garlic bread (or your favorite bread)
Directions for the cheesy chicken
Boil water in a very large pot for noodles. Once water boils add noodles. At this time get your cubed chicken, and peppers/onions in a skillet together. Start cooking until chicken is done thoroughly. Peppers will be soft by this time. While chicken is cooking keep stirring and checking noodles, once noodles are done drain the water and return to pot. Add the milk and butter and stir in, add the velveeta cubes and stir until melted in. (Sometimes I put a lid over it and let it set a few minutes to get the cheese soft). Once melted add the chicken/peppers and stir together. Dish onto plates and enjoy

Depending on what vegetable and bread you chose you will know when to start cooking them. Dish onto plates and eat
This is an easy recipe that is done and on the table in about 30 minutes.
Leftovers warm up great.
Edit: if you cut out the chicken take the cheese down to 11 or 12 ounces
10 oz. condensed cream of broccoli soup, 1/3 c mayo, 2 T milk, 1 1/4 c shredded cheddar plus more for the top (I use a 2 c bag), 1/2 t sugar, 1/4 t pepper, dash nutmeg, 2 c cooked broccoli (I use a big bag of frozen chopped broccoli), 1 1/2 c cooked quinoa
Cook quinoa: combine 3/4 c quinoa, 1 1/2 c water, salt. Boil. Reduce heat to low, cover and simmer 18 minutes.
Oven to 350. In large bowl combine soup, mayo, milk, cheese, sugar, pepper, nutmeg. Stir in quinoa and broccoli. Transfer to casserole dish. Sprinkle with extra shredded cheddar. Bake 40 minutes.
T - Steak, Roasted garlic potatoes, broccoli
W - Spaghetti, side salad, garlic bread
T - Shrimp and veggie lo mein (onion, bok choy, carrot)
F - Chicken tacos
I begrudgingly put chicken on the list. It really sounds dreadful so I'm hoping the liberal taco seasoning will make it edible.
Cube and cook a chicken breast and 3 strips of bacon, put in the fridge to cool. Cook your pasta (penne, rotini, etc.) then drain and put it with the chicken and bacon. Once the chicken, bacon and pasta have cooled to atleast room temperature mix in a large bowl and add in your salad, about 50/50 salad pasta mixture (I buy the bags of Caesar salad.) Then add your dressing and serve.
I add tomatoes in with mine because my husband doesn't like them. You can add as much pasta or salad mixture as you like. My husband loves it heavy on the pasta so I add more than the lettuce to his bowl.
Monday- Cajun chicken and rice
Tuesday- Vegan chili
Wednesday- baked ziti
Thursday- Potato and Corn chowder (took this from the fall food thread)
Friday- Roasted Chickpea wraps
Monday: pulled chicken sliders with corn on the cob
Tuesday: black bean enchilada bake
Wednesday: white bean and ham soup with biscuits
Thursday: chicken fried rice
Friday: pizza
Weekends are free for all with any leftovers we might have. I like to leave weekends open to try out more time consuming recipes as well.
