Recipes for diabetes

my friend's three year old niece just got diagnosed with type 1. Her mom is my pregnancy twin and is due the same day as me. So now she has to figure out how to help her daughter deal with the finger pricks and the insulin shots while being 35 weeks pregnant. My friend wants to help since she's the kid's care taker most of the time. Here's where I need your help. They tend to do a lot of baking since the munchkin loves to be in the kitchen, obviously baking cookies is not such a good idea anymore. Do you ladies have any recipes that will be easy to do with a three year old that also said three year old would enjoy? Thanks in advance

Re: Recipes for diabetes

  • Listen, I did not read your actual post. I just read the title and thought. "I have a recipe for diabetes. Eat as much ice cream as I have been. THAT'S a recipe for diabetes!"

  • @KimmySchmidt that's hilarious. Thanks for the good laugh this afternoon. Especially after the shitty morning I had
  • @marikkita12 I wish I had something helpful to add but I really feel like this is the type of information they'll need to get from their doctors. Type 1 is definitely different than type 2 so it's not so much about eliminating things as it is finding the right balance and constantly checking blood sugar levels. There will be times when she'll need the extra sugar if she's too low.
  • Waahhh @KimmySchmidt just took my joke.
  • @marikkita12 The family will probably having some fairly intensive and education classes with the diabetic educator and endocrinologist. They don't screw around with juvenile diabetes, especially at that age. @toimadness1 is right when she says it's about balance. One of my very dear friends has Type 1, and while she tries to limit processes sugar in syrups and candy, she by no means deprives herself.
That being said, since your friend wants to help as much as possible, I would direct her to the American (or Canadian) Diabetes Association. It is an amazing resource, and they have tons of information about early onset Type 1 diabetes as well as some excellent recipes.
