I much prefer the spelling Jameson. If the spelling were to be Jamison, I think the potential for the NN Jami would be much higher, and I much prefer the NN James.
To go with Garrett I like Easton Joseph best from your list, followed by Jameson Scott. Not a fan of the Jamison spelling (my brain wants to pronounce that Jam-ih-son instead of Jame-eh-son)
Easton is a place name. It actually means "a town in the east." Place names are pretty trendy right now, you run the risk of it being seen as dated and out of style when the trend goes away eventually. Also, it's a place name, not a person name.
Jameson/Jamison is an example of the "last name as first name" trend, which also runs to risk of seeming outdated a generation from now. Of the two, Jameson is better, because it actually has the name James in it and means son of James.
Anderson Joseph is also a "last name as first name" thing, but I like it a little better than the other choices. It means son of Anders or Andrew.
Maybe consider Andrew Joseph -- a rock-solid classic name. I think Andrew goes with Garrett better than any of the choices you listed.
For my preference, I'm not into any of them. These are all names where the meaning of the name is phonetically spelled out in the name itself.
