@Julia70286 Thank you! I loved doing stuffed portabellos. Can't wait to try this one. Let me know how you decide to do the sausage. I think I would probably mix it in with the filling and do a salad or quinoa as a side.
rinse and drain a can of black beans and reheat slowly. one heart of romaine chopped 16 ounces of salsa over medium heat in a wide pan with a lid when it bubbles, crack 4-6 eggs into the salsa. cover with lid and cook 5-8 minutes, depending on how set you want the eggs. Make a pile of lettuce then beans then eggs and salsa. Serve with cheese and chips?
@jhburton Ok so I did the mushrooms last night but just grilled the sausage on the side. I ended up sopping up the cheese mixture with the sausage anyway, so next time I think I'll add it in to the stuffing. They were pretty good! I added some ricotta to the mix as well... the recipe says it's for 3 mushrooms, but I had JUST enough for three with the added ricotta. Maybe my mushrooms were just above average size.
Man I feel like such a slacker after reading everyone's great ideas! So far this week I got a borrito casserole and homemade pizzas. That's it.....No idea what I'm going to do Wed-Fri.
We had spaghetti and meatballs tonight and will have pork tenderloin with fresh green beans and scalloped potatoes tomorrow night. I still can't stand to cook chicken, so we're having a lot of pork and beef these days. My grocery budget misses the [relative] inexpensive-ness of chicken!
thanks to food aversions all I can deal w are ground beef and shrimp: chopped steak w mushroom gravy over garlic mashed potatoes and a shrimp Caesar salad w bacon

Honestly though, if it were up our LO we would be eating Kraft Mac and Cheese with Tuna and Peas every day until he arrives! The only thing that stops me is that I live in Spain and it is not easy to find. My mom is coming in June and has assured me she will be bringing at least 5 boxes...
@Morningstar80 that's so funny! I have a friend who lived in Spain and she begged me to send her Hot Cheetos, which she rationed for the remaining months she was there teaching lol
