What's for dinner this week?

I need some inspiration!  We are in a food rut. I'm making beef and broccoli one night but after that I am stuck. What are you eating this week?

  • @jillianpardo Lentil stew sounds delicious.  Do you have a recipe?

    We tend to have the same meals week after week, too because dinner prep goes faster when it's something I've made many times.  Our standards:

    Black bean burgers with sweet potato fries (baked) and mixed roasted veggies
    Tacos with quinoa meat substitute (it's just quinoa prepared as directed then mixed with some sauteed onions, a can of tomato sauce and some taco seasoning)
    Pasta (either spaghetti with homemade marinara or rotini with kale, garlic and feta)
    Baked potatoes with sour cream and chives (surprisingly filling)
    Rice and beans

  • On our menu for the week, in no particular order:

    Cobb salad
    Turkey burgers & sweet potato fries
    Fish tacos
    Pasta with balsamic glazed brussels sprouts and bacon
    Paneer with peas in masala sauce and naan
    Brinner- Eggs, roasted breakfast potatoes, bacon & strawberries
    And our Friday standby ... frozen pizza and caesar salad

    These are a lot of our go-to weekday meals.  I have to be honest, there are a lot of frozen and/or premade items in this meal plan (pizza, fries, potatoes, masala sauce, burgers).  Now that DH is almost done with his busy season at work and I'm into my second tri with less fatigue and no more aversions, I have no excuses for the fake cooking.  It's not really that hard to cut up real sweet potatoes and throw them in the oven.  Next week, I'll get on it! But seriously, Trader Joe's has such good frozen options!

    I'm making chicken pot pie tonight, perfect for a rainy day! Also making beef and apple meatballs with mashed sweet potatoes this week (apple meatballs sound a little odd, but they are so good!). The rest of our week gets filled up with Bible study groups and a music rehearsal where food is provided.
  • I'm currently at a loss for dinners this week. I have an aversion to all meat, can't even stand being around it. DH is also incredibly picky and was never taught how to cook anything so it's all on me. I used to have such well constructed meal plans but now all I want is pickles, coffee, and ice cream.. 
  • Slow cooker vegetarian lasagna (didn't love it), enchilada casserole, parmesan veggie quinoa bake, broccoli soup with pesto meatballs, curried squash soup. 
  • My new favorite is spaghetti squash spaghetti. 

    The squash acts as a bowl and the inside is shredded as noodles. Top with your choice of chicken, and then add sauce and cheese! Perfection. 
  • We won't be home much this week, so not many options here. Tonight we are having grilled steak and mashed potatoes, and tomorrow is BBQ chicken with Mac and cheese.

  • My new favorite is spaghetti squash spaghetti. 

    The squash acts as a bowl and the inside is shredded as noodles. Top with your choice of chicken, and then add sauce and cheese! Perfection. 
    We loooove spaghetti squash around here. Our favorite is mixing in burrito ingredients (sautéed meat with peppers and onions, black beans, cumin, chili pepper) with the squash, then add it back to the bowl, top with cheese and bake for another 10 minutes. It's a staple here!

    Greek salad with chicken.
    Pork tenderloin with veggies.
    Chicken thighs with carrots and beans.

    Steak, salad and baked potato.
    Breakfast for supper.
  • Now I'm hungry!! You guys are rockstars. 
    Today I am making sweet potato chili with a soft pretzel I stole from a training at work. Then Schupfnudeln (thick potato noodles) with summer veggies and homemade tomato sauce. That's all I've got so far,  haha.

    Beef enchiladas, again with salad (can you tell I struggle with veggies?)

    Pork roast, carrots, potatoes

    Pork tacos with squash and salad

    Pork chili verde

    Basically, I'll make a pork roast on Wed and use the leftover pork for the tacos and chili. :) easy.

    First ultrasound 2/19 - one baby with a heart rate of 127! EDD 10/11/2016

  • @jillianpardo , do you make your empanada dough from scratch?  If so, what is your recipe?  I love empanadas, but suck at making the dough!!!  We end up buying pie crust instead, and it can get pricey!

    @mrskratt, i LOVE shepherd's pie!  this makes me want to make it this week!

    Loving all these spaghetti squash recipes! I love the stuff! Try sautéing it after baking the squash itself, before you put the "noodles" back in the bowl. Cuts down on the watery-ness significantly! 

    Eta- also super impressed with the number of you who have a full week's menu planned out. I'm on a meal to meal plan right now bc of nausea 
  • We never actually remove the noodles. We just scrape them up in the half bowl and bake them that way. :) 
  • Reading this thread, I feel like a stereotype of a bachelor! So far, the plan is dinner at a friend's house tonight, chili and cornbread tomorrow, probably leftover chili Wednesday, turkey burgers with let's say roasted green beans on Thursday, and takeout gyros on Friday.

  • Wow, you guys are rocking at meal planning and cooking! I used to have meal plans every week, but that all went out the window during first tri (plus DH was working late nights.) This week, the best I could come up with was copycat P.F. Chang's lettuce wraps. 
  • burger tacos shrimp scampi dinner out for our anniversary and probably more shrimp. I can't do meat with fibers so ground beef and shrimp forever! 
  • We had a zippy white bean and corn salad with lots of veggies over farro with a soft boiled egg and advacado. It's one of my favorites and you can put just about anything in it. 

  • We had chicken and broccoli Alfredo with garlic bread tonight.. and I work tues, wed, thurs, so I won't be home until 8ish.. not sure what we'll eat friday.. maybe out?
  • Love these threads!  I feel like I'm in a dinner rut right now.  Up this week:

    -out for sushi yesterday
    -mac n cheese mixed with ground beef
    -ham, egg and cheese hashbrown casserole
    -crockpot BBQ pork sandwiches with a side of ??  I wish it was corn on the cob season!
    -Cracked Out Bubble Up Chicken casserole (pinterest)
    -Turkey brats and oven baked fries (sliced potatoes with creole seasoning and EVOO)

    Notice the lack of veggies.  Still have a major aversion to them at this point, with the exception of an occasional salad.  Hoping to bring back some more healthy options in a few weeks or so when I'm (hopefully) feeling up to it.

  • BLT's with avocado and fresh fruit on the side  (that was tonight and I had two ugh so good lol) I had cut up strawberries, pineapple and watermelon

    Stuffed shells with salad and garlic bread

    Baked chicken thighs (another go to my family loves it's just brown sugar and that dry Italian seasoning mix sprinkled on, holy crap it's good!) with roasted potatoes and corn on the cob

    A new recipe I'm trying from pampered chef for a teriyaki Asian style meatball something or other? I forget the exact name but if it turns out well I will post the recipe here, it seems easy to make anyway

  • @annabenannaI make homemade empanadas all the time and I use the frozen ones made by Goya, not sure if they are available where you live I had to hunt around for mine and found them at a local Hispanic market. They have turmeric in the dough and it gives this amazing flavor and color and something about their dough it comes out chewy and crunchy and just perfect really.
  • I'm so jealous of all these meals.. DH is a picky eater (won't eat fish and can't eat any sort of Asian food due to migraines). I can't complain too much though.. he does all the cooking and is really great at it. I still get tons of inspiration from these posts though! Keep em coming!

  • @ladyshark311 We use the goya ones as well a lot for our emanadas! @annabenanna I find the trick with pie dough is using ice water and ice cold butter and don't forget to add a touch of salt. TBH, a lot of times I make mine in the food processor... mix until it just comes together enough.

  • Yesterday(meatless Monday): four cheese pasta with Parmesan potatoes

    Tonight we are having quesadilla pie (garnished with avocado, lettuce, tomato, and sour cream) with Mexican rice. 

    tomorrow: cabbage roll casserole and mini stuffed peppers (the casserole is new and my DH is kinda picky so the stuffed peppers are back up)

    Thursday: crock pot brown sugar pork tenderloin with stuffing

    Friday: crescent roll pigs in a blanket with cheesy rotini 

    Saturday: take out 


    as you can see, DH basically eats like a toddler and it drives me nuts because there is not a single vegetable I've met that I don't like (including the often regarded as vile bitter melon).

    Great ideas ladies! I made chicken stir fry yesterday, which my super picky-veggie hating DH LOVED! My 4 year old loved it too and asked for seconds. 

    Tonight was chicken pot pie - also a favorite in my house. I've got leftovers for lunch all week!

    tomorrow I might do burritos. Thursday DD is going with Grandma and I'm craving sushi so we will prob go out.

    We are planning:

    Chicken rigatoni with spinach and sundried tomatoes

    Other nights will be leftovers and/or eating out 
  • this thread has helped encourage me to start cooking again, we've been in a slump. Poor DH.

  • We were meal planners extraordinaire before the first tri. This week is the first time I've felt human enough to eat. I've even done some of the cooking!

    Monday was "Grandma pizza"- a thin crust cheese pizza with canned diced tomatoes on top of the cheese so they get a bit roasty 
    last night was huevos rancheros 
    tonight will be enchiladas
    Thursday is little ears pasta with Italian sausage and broccoli 
    Friday will be spicy beef brisket sandwiches and French fries

    next week DH is out of town for the whole week (work conference) so I don't know what I'm going to do.
  • I'm late to the game, just because I have been trying to figure out the whole gestational diabetes thing, but I've come up with some ideas for the week!

    Zucchini Lasagna (zucchini instead of noodles)
    Pork chops with sauteed mushroom sauce and roasted veggies
    Portobello mushrooms stuffed with spinach, cheese and chicken/feta sausage

    The rest of the nights we'll probs just go out.

    TBH, I've never made them before, so I can't vouch for how good they are, but the pictures look amazing! I'm going to use a store bought chicken/spinach/feta sausage that I found to go with it. I haven't decided if I want to mix the sausage in with the filling or just cook it on the side.
