Lunch/Dinner Ideas?

I'm sorry if we already have a post like this.. but I haven't seen one in a while. Can we please share some lunch/dinner ideas? 

For the past two weeks I've been eating take out 90% of the time because it's the only thing I've been able to stomach (so unhealthy and expensive!) I'm finally able to start thinking about cooking dinner at home.. and to help the bank account I need to start packing my lunch again. 

What have you guys been making for lunches and dinners (especially if you've been really sick like myself??)

  • @nlane0723 that soup looks amazing!! My husband can't have sausage (gives him migraines) but I may just make a pot of it for my lunches. Thanks for the idea!

  • I seem to be loving salads which is weird cause pre-pregnancy I hated them, but my only issue is I'm too lazy to make them but if someone makes it for me I eat it up! And it stays down nicely!

  • I cooked yesterday for the first time in over a week. I made quiche with chicken and tomatoes and I've eaten 4 slices over the last 2 days. Most things still don't sound good to me. 

    I crave carbs during first tri so potatoes and mac & cheese are staples for me.

  • This week we had chicken tacos which I made in the crockpot. Super easy and you can do whatever spice/lack of spice you want! I put 8 chicken breast in the crockpot and poured my desired taco seasoning sauce over the top. I use the Frontera fajita skillet sauce because I love it but there are other favors. (Two pouches for the 8 and one if you do 4 breasts). Cook on low for 5-6 hours then take out and shred or just cut up in chunks. I serve that with all the usual taco fixings, so good!

    This week I made Shepherd's Pie as well as a pot roast in the crockpot. Today was boiled dinner (ham, cabbage and potatoes) I've been making things that have meat as a part of the recipe but I can just eat the veggies and potatoes if my stomach just isn't feeling it that day. 
  • Hmm....BLTs sound good. I'm having a hard time cooking especially with meat lately but, pasta and veggies and sauce is always inexpensive and easy. Sorry for the limited options I can offer...I'm surviving courtesy of instant mashed potatoes right now (takeout from a fried chicken place, lol not even that I made)
  • Ugh. I try making food at home and hubby has to eat it while I eat french fries. It's awful. I've eaten out so much in the last month it's ridiculous!

  • I'm having major food aversions too, so while I did make corned beef and cabbage tonight for the hubs, I ate bread and butter and a Popsicle.  :s

    I am loving peanut butter toast right now. Add some fruit and it's a great meal. Lately I have been making spaghetti with shrimp that I cook with butter and garlic. So good! 

    Nachos also rock my world at the moment.

    This sounds exactly like us (although thankfully my husband does the cooking). He and our toddler eat a "normal" dinner and there I am eating kraft mac and cheese or french fries or taco bell or something absolutely terrible. Can't wait for this stage to be over!

  • @klv peanut butter toast has been my go-to lunch lately also. Usually with a banana and a glass of milk to accompany it...
  • Soups and salads (with croutons - they must have croutons). Lentil soup and this Iranian bean and noodle soup have been my favorites lately since I can't deal with meat. Now, if someone can help me figure out how to plan a meatless, soup-based Easter brunch, we'll be golden.

    @greenlia Yes! Give me all the croutons! Plus, I usually stick to vinaigrettes, but I only want fatty, creamy dressings now :/

  • @rozANDbenSINCE2001 Me too with the dressings! I always make my own mustard vinagrette and currently have a fridge crammed full with ranch, Caesar, and gorgonzola dressings. Like, what?
  • Oh thank god, I'm not the only one who has been slacking on cooking. I think we all must be feeling better if we are able to even think about cooking meals. Yesss! Something about handling raw meat was Sooo unappealing to me these last 6 weeks!! 

    Love the ideas! Anyone else a PW fanatic? I think I end up making more of her recipes just based off her photos alone. Here's my allll time fave soup recipe:

  • Take out for a while for us.  I actually made pancakes this am which was a huge deal.

  • @vcabbyw - mmmm!!! I love me some Pioneer Woman. Her fancy Mac n' cheese is my absolute fav, although I only make it on special occasions. I also like her beef and snow peas. 

    love all these meal ideas ladies! I totally struggle with lunch. I usually end up eating an Amy's bean burrito, cherry tomatoes, some fruit, and a Greek yogurt. Boring and the burrito is probably high in sodium.

    May 2011- natural pregnancy (metformin only); m/c @ 9 weeks + D&C
    July 2011- lap to remove dermoid cyst
    August 2012-current- 9 rounds of Clomid, 1 cycle of Femara, several cycles of soy isos, 1 IUI, O'd every cycle, BFN
    August 2014- lap to remove uterine septum. Everything else looking good.
    Moving onto IVF Feb/March 2016 Just kidding. Natural bfp 1/30/16.
    1st beta 2/1 = 110. 2nd beta 2/3 = 332.

    First ultrasound 2/19 - one baby with a heart rate of 127! EDD 10/11/2016

  • It's funny, I was really repulsed by the idea of salads, but then just last week I started craving them like crazy! But of course it's the unhealthy kind with ranch dressing and bacon and eggs. BUT I'll gladly take that over taco bell! At least I'm getting some sort of nutrients. 

    Also, homemade potato soup sounds really good too!! It's going to be a little warm for that this week so maybe we'll do baked potatoes! Thanks for the idea!
