Monday - Subway because cooking was way too much after the crazy weekend we had. Tuesday - Cheesy chicken skillet Wednesday - Meatloaf Thursday - Tacos Friday - BBQ chicken with rice Saturday - Grocery day!
I have gotten horrible about meal planning and have just been throwing something together at dinner time. I really need to get back at it. Looking forward to getting some good ideas!
@MamaKSquared I am ok with the planning, I just need new ideas. I feel like we eat the same things all the time. I love cooking, I am just not very creative. I rely on recipes. :-)
Last night I made chicken tenders. Tonight I'm doing chicken pot pie because chicken is the only meat in my freezer until Thursday which is grocery day.
Perfect timing - I do my grocery shopping and meal planning on Wednesdays so this thread will be a great resource. Last week I made a crockpot meal that was amazing and super easy that I'll share with all of you:
Chicken Burrito filling (or nacho topping... or whatever!) Place 4 boneless skinless chicken breasts on the bottom of your crockpot and sprinkle a packet (2 T.) of taco seasoning on them. Pour a jar of salsa over the top of that. Add a can of drained black beans and 1-2 c. (to your liking) of frozen corn. Cook on high for 4 hours or low for 8 hours. 30 minutes before it's done, shred the chicken with two forks and add 8 oz. of cubed cream cheese. Stir and serve.... on top of nachos, inside tortillas, and with whatever other toppings you like! Sooooo tasty.
Monday - Breakfast (french toast, scrambled eggs, Canadian bacon) Tuesday - Undecided. My son is at home throwing up, so probably something simple for the rest of us... Wednesday - Taco Salad Thursday - Sloppy Joe's Friday - Pulled BBQ Chicken sandwiches
