Meal Planning Sunday

So I was wondering if any of you ladies would like to start another weekly post? Here we can share meal planning menus, recipes and seasonal shopping list. This will help us eat the healthy and nutritional food that our growing babies need. We can even have weekly themes if we want ( crockpot, 5 ingredients or less, vegetarian, ect)

What do you guys think?

  • I'm down once the first trimester passes. Thus MS is kicking my butt and I can't even handle reading any food posts on here but I will definitely be involved when I'm not puking my guts out. Lol

    I'm in. I've been struggling in the kitchen with MS but finally starting to ease my way back in. 

    On the menu for tonight is penne a la vodka with sausage. This week I'm also thinking I'll do spiralized sweet potatoes with fried eggs, and steak caesar salads, because I've been craving both of those things. I'm having some pretty intense leftovers aversions which sucks because that's usually my lunch plan. So if anyone has any good lunch suggestions that aren't sandwiches, I'll take those too. 

    ETA: I added bibimbap bowls, quesadillas & tomato soup, and paneer masala with naan to the week menu. 

  • Good call! I found super easy chicken taco recipe we made yesterday only took 30 minutes. So far no plans on what to make as I'm struggling a lot today with feeling like crap.

  • I'm down. We usually eat out or buy the Costco meals by the deli - we've been in a tiny furnished apartment for a while, but we just moved into our new house and I'm ready to get cooking! Especially if I can find some good freezer meals that I can throw into the crock pot once the baby is here.
  • I'm so in!! I've actually been making DH and DD make more suggestions lately since nothing sounds appealing. They are no help since they'd both eat meatloaf every day.

    We could have both. A Costco theme and a freezer meal theme. Were you make double the recipe and eat one that night and freeze the other half. By the end of the week you have 7 freezer meals.

  • I meal plan and shop on Sunday's! I usually prep lunch for me (DH eats at work). This week's big batch= super grains + lentils and carrots for my lunches.

    This week's menu:
    • mushrooms in white wine sauce pasta plus a salad
    • roasted sausages with roasted potatoes, beets and carrots
    • chicken nuggets with mac and cheese and broccoli (kiddie food night lol)
    • bean burrito night with guac and chips

    Tonight was smoothie bowls and one night is always soup and sandwich night/ scavenge for leftovers. We do the same 30 minute meals on regular rotation with a new recipe experiment every other week or so. I'd love to hear other people's quick easy meal plans!!
  • I'm game to join in! I haven't been puking my guts out like some (thankfully!) But cooking and coming up with ideas on what to cook has been tough...I just feel pretty blah. Cooking itself is what gets me right now and unfortunately my DH doesn't cook. Love the freezer meal idea!
  • @Y0urm0m it's a Korean noodle bowl. Buckwheat noodles, kimchi, a fried egg, sprouts/cilantro/whatever else you want on it and a spicy sauce that's super easy to make called kochujang. They're delicious! 

  • This is perfect!  I especially need ideas for quick, healthy lunches along with dinners.  I have no energy to adult right now, so I love the idea of having a meal one night and freezing the other half for a "freezer meal" later.

    I made this crock-pot potato corn soup last weekend, and not only was it easy, but i'm sure you could freeze it.  It made tons too!  (it's just my fiance and I)

  • I love this thread! The hardest thing about cooking dinner is coming up with something to make. Tonight I made shredded chicken enchiladas topped with fresh salsa, I got it from the deli since I can't seem to match the right ingredients to taste as good as the store. Since DH is leaving on a work trip tomorrow for two weeks I will be having this for lunch and dinner tomorrow. I also plan to make baked ziti and a Caesar salad for myself this week, it's easy and reheats well. I love to cook but I hate spending a lot of money on crazy ingredients.

  • So I'm doing a 6 ingredient crockpot meal this week. Let me know if you want any recipes. It's raining all week so crockpot meals souds perfect.

    Crockpot tomato soup and grilled cheese
    Crockpot Chicken and dumpling
    Crockpot trader joes pot roast with veggies and potatoes
    Crockpot chili and cornbread
    Crockpot chicken tacos
    Crockpot tortillini, sausage, and spinach soup.

    And tonight is steak fajitas, beans and rice. Unfortunately it's not crockpot.

  • I love this idea. I'm terrible at planning and I know I need to be eating better than I have been. I like the seasonal shopping list idea bc I end up getting the same stuff and being bored with my choices. I sent DH to get me a burger bc I put off grocery shopping until tomorrow.

    I'll only post recipes if I'm asked for it. I don't want to waste a whole lot of time on a recipe nobody is interested in. Especially if it's my own and I don't use measurements.


  • I'm in. We typically meal plan at the beginning of the week. Since meat hasn't been my favorite thing recently I've just been making sure the sides to go with any meal are something that would typically sound good to me. We are a little off with the holidays right now and going back to work, but we have stuff to make Italian beef (with frozen veggies), stuffed breadsticks (with frozen veggies or salad) and teriyaki chicken (with white rice and stir fry veggies). We typically pick up dinner on Fridays, so I only need to figure out one other dinner this "week"
  • The ovia app has some yummy recipes. I just did the chicken noodle soup and it was so yummy! Now I have soup for 3 days.

    2 Tuna salad stuffed In a avacado half shell.
    Salami, cheese, and crackers
    Mexican chicken salad in a jar (using left over crockpot chicken)
    Left over pot roast
    BLT avacado wrap.
  • I'm in! I'm super picky so I get bored with the same recipes over and over again. We don't eat tons of veggies (I hate them) so I'd be interested in learning different ways to cook them and hopefully start liking them. Our recipes consist of meat and carbs.

    If you want any recipes from me feel free to ask/PM! I usually started with a recipe a long time ago and over the years adjusted to what is cheaper/ easier/ what we had on hand. My meals are always like that lady on NPR- you call in and tell her 5 random ingredients in your house and she tells you how to turn it into a meal! If anyone is at a loss, post your ingredients here and we can play ;)

    (skinnytaste has some good meals I've made!).

  • I'm in. In our house DH usually plans and I cook. Most of our favorite go-to recipes like @Y0urm0m, are from my head and I don't measure, but if somebody would like a recipe I will write it up. No promises they will all be healthy though!

  • We do similar dinners each week and shop/meal prep every Sunday. This is a usual rotation for us:
    -Mexican quinoa bake (recipe from Damn Delicious)
    -Salmon, quinoa or rice, and roasted veggies
    -Eggs, sweet potatoes and veggies, toast, bacon for the DH
    -Veggie burger for me, chicken burger for DH, sweet potato fries, salad
    -Frozen gf pizza with added toppings, salad
    -Soup and grilled cheese, salad
    -Pasta with added veggies for me and sausage for DH

    I'm mostly vegetarian and my breakfast most days is either a green smoothie or yogurt with fruit. On Sundays I make 5 salads and store them in Pyrex containers in the fridge and they last all week for my lunches.

    Chicken burrito bowls
    Baked potato soup
    Pork chops with baked potato and broccoli
    Tuna noodle casserole
    Chicken pomodoro with a salad
  • I'm horrible at meal planning. I want to get better at it though. Does anyone have a good beef stew recipe? I do know that I want to make that sometime this week.

  • On our menu this week:
    - Turkey chili
    - Cheesy chicken spaghetti casserole (subbing spaghetti with spaghetti squash) from plainchicken.com
    - Zesty Italian crockpot cheesy chicken (I put it over Dream Fields rotini) from Sippy Cup Mom = SUPER easy to make

    All three of these should make a good amount of leftovers, so 2 or 3 days will be repeats.
  • I may raid this for ideas.... but I'm thinking none of you will want my weekly input. Ha. This Saturday DH and I are starting a Whole30. Which means meat, fruit, veggies... and no fun stuff like pasta or sugar. I'm really looking forward to it though. I could like on meals of just meat and veggies. And my favorite breakfast is simply apple slices and prosciutto. ♡ (And I don't care what anyone says about pregnant women eating prosciutto ;) )
  • Last night - Surf-n-Turf (T-bone steaks with grilled pineapple, and shrimp skewers)
    This week: Tacos, Portobello mushroom pork tenderloin

    I usually cook more nights than I am this week, but this week's work schedule is crazy and I'm getting home late 3 days this week. Probably at least a couple nights of either pizza or something from one of the local restaurants.

     So there's this boy. He kinda stole my heart. He calls me "Mom"

    I know everybody is on there own this week but let's talk about next weeks theme. I would start a new poll but I don't want to crowd the board up. Here are some of my ideas

    One pot meals
    Veggie heavy
    Around the world.

    What do you guys think? Feel free to throw out your own suggestions.
  • Joining in on the fun. Monday we had stuffed shells with salad (made an extra pan for the freezer), tonight we are doing taco night and I have nothing else planned! We are going to start meal prepping on Sundays for both dinner and lunch so I'm looking forward to seeing what ideas you all have!

    I vote on pot meals as well--let's start out easy :)
