Food Cooked with Alcohol

So while I definitely wouldn't have something infused with alcohol while KU, I was wondering about cooking with alcohol? I've read conflicting things concerning whether the alcohol burns off. I'm dying for some hibachi today (which I believe is cooked with rice wine) and know some restaurants may cook with wine or other alcohol, so I was wondering if the alcohol burns off, is a negligible amount, or something to consider. Any insight?

  • The alcohol burns off for the most part. Anything left behind would be a negligible amount. I've actually been cooking with leftover wine since I can't drink it and DH doesn't drink it.

  • Agreed- the actual alcohol content will burn off when used to cook. Just make sure u burn it off all the way. One time I was making mussels, and I didn't let the alcohol burn long enough.. The end result was mussels that tasted like they were doused in white wine (gross )
  • It depends on what is used and how long it's cooked. Cooking with rice wine at hibachi I would think is ok cause the amount of wine you would get would be like just drops worth plus they burn a lot off. Not all though. Watch this video if you want to avoid drooling on you keyboard I'd just watch the end at 16:30.
