Chicken caesar salad tonight. This has been on our meal plan for the past three weeks, because it's pretty easy. I can make most of it ahead of time, and then just throw it together when I get home from work.
Marinated chicken (frozen from the store) and fresh green beans from my parents garden. Dessert will be leftover dainties from our baby shower this weekend. Yum!!!
salad bowls! roasted sweet potato, quinoa, and lemon marinated chickpeas. topped with a parsley tahini sauce, sesame and chia seeds and a little bit of feta.
I love the food inspiration posts because I never have a clue what to cook! Usually random meat with frozen veggies and mashed potato... Recipes always look too confusing to me tonight is spaghetti bolognese

We've been doing a lot of bowls lately, too! My current fave combo is sautéed kale with garlic and onion, sautéed sweet potatoes, black rice, steamed lentils with barbecue sauce, topped with hummus and avocado.
Tonight we'll probably do buffalo "chicken" salad. We use the vegan chicken tenders from Trader Joe's tossed in some Frank's Red Hot, and top on a salad mix of romaine and baby spinach, carrots, tomato, corn, and avocado topped with dairy free ranch.
PSA: to any mommas who have cut out dairy due to BF their LO, I am happy to provide product recommendations.

Yum!!! And yes, bowls are sooooo easy to throw together and have literally everything I need to keep up! We do alot of them lately. I find that if I roast up a bunch of vegetables and chickpeas one day that it makes throwing them together for the rest of the week a snap! And I've been obsessed with making homemade hummus for them (so much cheaper than store bought with better flavor and it makes so much!)
