I sometimes sneak veggies in using baby food. Like I'll make pancakes and put a veggie baby food jar in the batter. Something easy like carrot or sweet potato. I sometimes use baby food veggies in pizza sauce too or lasagna ..spaghetti.. Things it'll get sort of lost in so they don't even notice. DS likes 'salad' which to him is croutons, ranch, and cheese. I shred carrots like super super fine and he thinks it's cheese.
My 3 year old loves spaghetti and I make the sauce with a variety of pureed veggies. Of course it has to look red or he will question the contents, but otherwise he is oblivious!
