Freezer meal ideas

Anyone have freezer meals that they would like to share?

We have been eating out so much recently because of various activities my dd's are involved in. Once the babe gets here I would like to get back on track with preparing meals at home. I initially wasn't going to do freezer meals, because to be honest, they aren't my favorite. I love to cook and like to make fresh made meals, instead of frozen. After all of this eating out though, it is making me realize that having a few shortcuts on hand would be a better alternative.

P.S. Please don't flame me if this has been discussed already. I did a search and found a few posts within posts, but thought it would be nice to have it all in one place.

Re: Freezer meal ideas

  • Pinterest has a plethora of any type of frozen meal. Whether it's a casserole, crockpot or whatever.

  • I'm familiar with Pinterest. It would be nice to have ideas of recipes that people have had success with though.

I just made about three weeks worth this past weekend. Lasagna, chicken enchiladas, gumbo, BBQ chicken and veggies for the crock pot, red beans, hamburger patties, lots of browned ground beef, and taco meat. It was pretty easy minus the standing to chop veggies. I just googled "freezer meals" and picked some recipes :)
  • Honestly because I was dragging my feet on this, I totally stocked up at Costco yesterday. They have tons of casseroles, pulled pork, meatloaf, etc that can be frozen & oven baked when ready.

I also stocked up on frozen veggie medleys, sweet potato fries/tots, and chicken thighs & breasts. Stuff easy enough for DH to just season & bake.
  • Smoothies
    1 c spinach
    1/4 c mixed berries
    1/2 banana
Freeze in individual bag. Blend with 2 c almond milk and 1-2 scoops of protein powder.

    Breakfast Tacos
    1 lb turkey sausage
    6 eggs
    Shredded cheese
    Whole wheat tortillas
    Salt
    Pepper

Cook turkey sausage all the way through. Add eggs and your desired amount of salt and pepper. Sprinkle cheese on tortillas; put egg/sausage mixture on top. Roll tortilla. Place in parchment paper and foil then freeze.

    Taco Soup
    2 cans pinto beans
    2 cans red kidney beans
    28 oz diced tomatoes
    1 can corn
    1 taco seasoning packet
    1 ranch seasoning packet

Mix all ingredients in crockpot. Cook on low for 8 hours. Let cool and store in small freezer bags for individual portions. To use thaw and microwave. Can serve with shredded cheese and tortilla chips.

Here's the meatball recipe. I used 2.5 lb of hamburger. I didn't use the liquid smoke for the sauce. Just added a few tablespoons of BBQ sauce I had in the fridge. And didn't use the minced onion in the sauce either.
  • I love this thread and encourage anyone to share any other simple recipes ?!?!?!
  • This is my favorite freezer recipe https://leiladishes.com/babies-and-burlattas/
I honestly think they taste better out of the freezer than if you make and immediately cook them. I make them without the enchilada sauce and cheese on top and then put the can of enchilada sauce and cheese on top right out of the freezer and into the oven.
  • Breakfast: I made two dozen and froze. My daughter and hubby are obsessed.
  • Also, make a big tin pan of this. Super yummy! I used gluten-free lasagna and it was delish.
  • I need to find someone with a Costco membership!! That would be awesommmme. :-)
  • My family loves an old favorite called "super supper dip". You can google the recipe. Freezes and reheats really well! We eat it with corn chips and love it!

Um, why is it 3AM? I need this right meow and hubby would have a canary if I just upped and went to Walmart!

Tater tot casserole is super cheap to make and freezes well.

    1 lb ground beef (browned)
1 can of cream of mushroom soup
1 can of veg-all (strain the juice out)

Cover with tater tots and bake until they're done.

ETA: Just brown the meat and add the other ingredients, then freeze. Bake when you're ready to serve.
  • White chicken chili.
Put a can of diced tomatoes and green chilis in instead of just the green chilis.
Cooked for 5 hrs in crockpot on low with 7 whole chicken breasts unthawed then when done I shredded the breasts and put them back in. So amazing. Crumble tortilla chips.

I've got a freezer full of really random things! I've just been making large portions when I cook and freezing part of it, so it's been a bit of a scatter brained approach.

I've got several pots of dhal and Indian spiced lamb and potato patties (one of the biggest advantages of having an Indian husband has been him teaching me how to cook). Some bags of pulled pork. Spaghetti bolognese. Chorizo, chickpea and sweet potato hash.

My favourite things in my freezer are not healthy or practical, but amazing - balls of ready to make cookie dough with white chocolate and raspberries (really reeeaally good!) and a big bag of Heston Blumenthal recipe triple cooked chips (well technically double cooked - you freeze them between the first and second fry. They're time consuming but incredible, so when I make them I do it in bulk and freeze most of them to enjoy later)

None of the recipes are difficult, but they're not really quick either. I'd be happy to share if anyone's interested though.

Ok I got 2 chicken ones that aren't really freezer but are so freaking easy.

    3-4 chicken breasts
    Diced red potatoes
    2 cans of green beans
    1 stick of butter
    1 package of Italian seasoning
Place potatoes on one side chicken in the middle then green beans on the other side pour the stick of melted butter over the entire thing and the packet of seasoning. Cover and bake at 350 for 1 hour.

    2nd one
    Crock pot
    2 frozen chicken breasts
1 can cream of chicken or mushroom soup
16 Oz package of cream cheese
1 packet of Italian season cover 6-8 hours on low
    Delish

    3rd pulled pork

    1 pork shoulder

    Root beer or cola
    Bbq sauce
    Onion buns
    Pork should in soda dd
  • These are great! I ended up having my baby yesterday, so my procrastination cost me a freezer full of goodies!
