I've been grilling like crazy! All kinds of veggies (mushrooms, scallions, peppers, onions, zucchini, summer squash, asparagus), chicken, tofu, potatoes, etc.
It was steak on the grill and a corn, black bean, avocado fiesta salad.
That sounds amazing! How do you make the salad? I'm cooking chicken that I have no idea what do with...
I used corn from 1 cob (I prefer it cooked so it's sweeter then I just ran it under cold water), 1 can of drained black beans, one avocado diced, one tomato diced (slice in half 1st to take out seeds and liquid), 1/4 of finely chopped red onion, juice of 1/2 a lime and a little zest too if you love lime, a handful of chopped cilantro, salt & pepper to taste. I also love this with tortilla chips YUM!

Me too, that's the only veg that sounds appealing to me. I am making a tomato-y, nutmeg-y, curry-esc sauce that I am just going to smother some broccoli and rice with.
Tacooooooos!!!!! With all the toppings - cheese, tomato, jalapeno, black olives, salsa, plain Greek yogurt (sour cream sub), taco sauce, lettuce, and whatever else my little heart desires!!! PS - has anyone tried the stand and stuff soft shells? I highly recommend - they are fantastic!
