We got the lightweight 2 stage. It's super light (11 pounds I think?) so changing sheets is really easy. Dd has been using it for about 18 months and its still in perfect condition. We are purchasing the same for baby #2.

@ItsGreen I don't think you'll be disappointed with any of their mattresses, but the coil mattresses are literally twice the weight of the foam. I LOVE how light my mattress is for easy sheet changes. I also have chronic lower back issues, so this is a big deal to me. If its not a concern for you, go with whatever one you like

DS is 15 months, and we love ours. We got the light, but not the double sided. The only thing I would do different is get the double sided one. The mattress is great... so easy to change sheets. I am less than 5 ft tall so maneuvering things in and out of the crib isn't easy for me, but this is so easy.
We have the double sided and I actually wouldn't bother spending the extra money. Per my pedi, you don't ever really need the softer side until they use a toddler bed (the firmer side is still a bit softer than a lot of baby mattresses.) Also, I don't know if this is because of the two sided but one side is slightly dented and the other bowing. I still love this mattress though and plan to change it out with the warranty. We just bought a second for our second and didn't bother getting the two sided.
Yes, we have the waterproof organic cotton ultra mattress. It has inner-coil springs and is heavier but that hasn't been a problem. We did not opt for the 2-stage option. As far as that two-sided option, the baby store we bought from said it's just a sales gimmic and that you don't need it in a crib mattress. So, I wouldn't spend the extra money for that feature. Overall, love the mattress. No funky smells. Easy to change and clean. Baby seems comfortable and well supported.
