I'm at work so this is a link to my DA because I put the recipe there and I'm too lazy to copy-pasta. Yes, I'm that lazy.
Anyways, if you like molasses cookies or ginger snaps, you should give these a try. They're my all time favorite cookie :-)

These are my easy, go-to Thanksgiving breakfast muffins for years now (I now just use canned pumpkin or canned sweet potato puree, and have stopped using individual spices, and started using a pre-combined pumpkin pie spice instead because I've gotten lazy)

For the crust I double this recipe https://www.gfjules.com/gluten-free-pie-crust-recipe-and-how-tos/#.U8gaMbFuqSo and I do a cinnamon bun bottom crust with it like this recipe does https://www.ohnuts.com/blog/cinnamon-bun-pecan-pie-recipe/ For the filling I used https://allrecipes.com/recipe/apple-pie-by-grandma-ople/ but i only used 6 apples. I also tossed cinnamon and nutmeg with the apples and mixed 2/3 of the caramel with the apples rather than pouring on top. I poured the rest on top. For the top crust I added a little bit of cinnamon and sugar to it and rolled it out, then used cookie cutters for the crust because my lattice skills with gluten free dough is still in practice!
This is pie before going into the oven. I wanted to use leaf cookie cutter, but apparently despite having 101 freaking cookie cutters, not a single leaf.
And if you like chocolate....make these!
