I'm going to a pot luck this weekend and making peanut noodles I think. Tonight I'm making split pea soup with Parmesan crusty things and toasted pumpkin seeds.

I usually take some kind of vegetable to potlucks. My favorites are strawberry salad like this:

but since both have cheese in them, I'm going to have to come up with something new this time. Come to think of it, so will DH b/c he usually (at his family's request) makes cheesy garlic mashed potatoes and cherry ice box pies. Dang it!
These stuffed mushrooms are always a hit! Sorry, they're loaded with dairy but I bet they could be made with dairy free stuff with a little tweaking.
Two pkg of button mushrooms
Italian dressing or your favorite vinaigrette
1 sleeve Ritz crackers @CLLDLL DO NOT SUB OTHER BRANDS! Just kidding
1 stick Cabot cheddar cheese
1 stick butter
Wash and de-stem the mushrooms. If you want to be fancy you can mince the stems and saute them with minced onions and garlic and add to the filling. If not, they're still yummy.
Put the mushroom caps on a baking sheet. I like to line it with parchment paper for easy cleanup. Put a few drops of dressing (like 1/4 tsp) in the caps.
Crush the crackers, melt the butter and shred the cheese and mix them all together. Don't put the butter in while it's still piping hot because it will melt the cheese and make it hard to mix. Add the sauteed veggies if using. Fill mushrooms with a heaping spoonful of filling and bake at 350 for 30-45 minutes, till the filling is brown on top and the mushrooms are soft.

I forget if Ritz are MSPI safe. But you could definitely do them with MSPI safe crackers, MSPI safe margarine and then I would probably replace the amount of cheese with half browned sausage, half Daiya.

Halve and seed jalapenos (wear gloves!)
Fill jalapenos with cream cheese.
Brush bbq sauce over filled jalapenos.
Wrap filled jalapenos with bacon, and secure with a toothpick.
Bake until the bacon is done and the jalapenos are soft.
(Cheater tip - I use the pre-cooked microwave-ready bacon. That way you don't have burnt bacon on top, and raw bacon in the middle.
I'm considering trying this with some daiya cheese.

Stuff with cream cheese or an almond. Or nothing in my case.
Wrap with 1/2 bacon slice and secure with a toothpick.
Bake until bacon is cooked through and date is warm and gooey.
Eat, die, go to heaven. Come back and eat another.
