Make ahead dinner/casserole?

I need a recipe for something I can assemble maybe the night before or in the morning then keep in the fridge until I need to pop it in the oven for dinner. We don't eat a lot of casseroles so all I can think of is lasagne which I don't really care for.

    Also I cook a turkey breast alot and I take the leftovers and make turkey pot pies and freeze them.  They are great to take out.

  • We do a super easy one that we call black bean chicken. Chicken breasts, drained can of black beans, drained can of corn, one jar of medium salsa. Put it the crockpot on low for 5-6 hours or high for 3-4. When it's done, shred the chicken and melt an 8 oz block of cream cheese. Serve in tortillas or over chips for killer nachos.

  • I make Calzones/pizza pockets ahead of time all the time!

    1lb pizza dough stuffed with about 1/2lb Italian sausage, 1C mozzarella cheese, plus whatever veggies you do/don't like = 6-8 calzones. I lay them on parchment paper and cover with plastic wrap sprayed with non-stick spray and stick in fridge until dinner. YUM!!!

    PS - they freeze really really really well, too!
