Disclaimer: DH meal planned and grocery shopped for this week since I was gone so this week isn't a typical week for us.
M - frozen spaghetti dinner (pre-made) T - Chick-fil-a (DS has an early soccer game) W - breakfast for dinner Th - chicken nuggets and mac and cheese F-S - I'll be back to meal planning and cooking
Sunday: stuffed Mexican peppers, Monday: @dashofreality 's spinach and artichoke chicken in the crockpot over noodles, Tuesday: homemade chicken nuggets with oven fries and sweet potato fries, Wednesday: leftover spinach and artichoke chicken over rice, Thursday: bean quesadillas, Friday: spaghetti with Cesar salad and bread.
Yesterday was roasted chicken and veggies. Hoped there would be leftovers but no such luck. The rest in no particular order: Chicken sausage, Mac and cheese and broccoli Pasta and turkey meatballs from the freezer Shrimp and kielbasa saffron rice We will fill in the gaps at panera or with pizza.
Sunday: pasta w/ homemade meat (and tons of veggies) sauce
My LO does not like cheese or bread (no easy mac n' cheese or sandwiches). I am going to work on soup this fall/winter- I'd love him to dig on some chili.
If being a math nerd is wrong, I don't wanna be right!
I haven't posted in a while because of absolutely insane work schedule and heavy use of meal delivery service.
Here's what we've got planned this week: M--Collards and rice, black beans, squash casserole T--grilled cheese (post-soccer practice) W- green beans and tempeh with tahini sauce (from freezer, delivery) Th- pasta F- baked fish, potatoes, salad
M:cheese ravioli and pumpkin Alfredo sauce (jar of of Alfredo sauce w/half a can of pumpkin)
T: turkey tacos, corn, black beans
W: spaghetti
R: quesadillas
F:probably out
@dashofreality : made your artichoke spinach crockpot meal last night. Wow. Life-affirming. DH's only complaint was I served it w really bland white rice. He seriously said, "This casserole deserves better than the rice" and started game-planning a new starch. We are leaning toward one of those 90 second microwaveable rice packets. We love the Spanish rice but I think they have Italian ones too. Anyway, thanks for the recipe. Yum yum yum yum.
So I've been trying to get better about planning, and have decided that my meal planning week starts on Saturday. We used to eat out every weekend, but now we're down to about once a month, and reserving take-out for later in the work week, when we're tired and I'm usually working late.
So here it goes... Saturday: Grilled Filet Mignon, Oven Risotto, Broccoli Sunday: Mom care package - DH got spaghetti and meatballs, I got crustless quiche Mon: Crockpot Chicken Tortilla Soup Tues: Leftovers - Risotto, Chicken tortilla soup Wed: DH has work dinner, nanny will feed the kids, I'll probably have cheese and crackers. Thurs: Taco Salad made with ground chicken breast Fri: Make your own pizza
@MommyAtty thanks so much, that makes me really to hear! That one is my favorite. The Chicken Florentine is a really similar recipe, but probably does better over starch.
Friday- BLT's (with turkey bacon, for some reason this smell of real bacon cooking brings on the morning sickness!)
** ok writing it out sure makes me want to try and be healthier!!! I realized that when i wrote "tator tots" But when you have a 5 year old you can not be perfect I guess
