Meal Planning Monday

Anyone else need some inspiration for dinners?  

What are your plans for dinner this week (or even just today)?

  • Monday: Fish tacos with mango salsa
    Tuesday: Grilled Chicken, Grilled peppers, brown rice
    Wednesday:  DH pick
    Thursday: Bruchetta pasta
    Friday: Burgers and FF (for DH and IL)


  • I usually plan on Sunday afternoon then go grocery shopping for the week, but I went shopping without a plan. So, in no particular order, we will have: 

    Grilled chicken breasts with salad
    Shrimp Teriyaki bowl
    Pulled pork sandwiches 
    Beef Roast
    BBQ Brats 
    Baby Birthday Ticker Ticker
    ::two chest pumps and a peace sign for Jenn:: ~ MrsJudgeyPants

  • Sheesh everyone has such good plans for dinner! All I am thinking about is:

    Monday - Filet Mignon wrapped in bacon
    Tuesday - Grilled marinated chicken breast and a salad
    Wednesday & Thursday I'm clueless.. Possibly homemade mac & cheese, and I have a lb of hamburger meat left.. what to do with it??

    Friday we're hopefully leaving out of town so honestly we'll probably stop at a Panera that evening...

  • ohh I need some inspiration.

    My plan:
    Monday: Spaghetti and homemade meatballs (making 7 lbs tonight to freeze)
    Tuesday - Out with the family for MILs Bday
    Wed: Maybe stuffed peppers with brown rice and turkey
    Thursday - Egg sandwiches? or left overs - Softball night for DH so need something quick
    Friday: maybe some kind of steamed fish and veggies

  • Sunday:  Kale Mediterranean Savory Bread Pudding
    Monday:  Reubens (with left over homemade sauerkraut) and some sauteed summer squash
    Tuesday:  Stuffed Poblano Peppers (as DH doesn't like Bell Peppers)
    Wednesday:  Greek Shrimp with Pasta
    Thursday:  Chicken and Eggplant Curry

    Let's see how many DH actually eats without complaint.
    This all sounds amazing! I would be livid if my husband tossed any of these dinners in the trash!

  • I'm wicked jealous of all of you who get to plan dinners.  DH works 2nd shift so we never eat together and he always needs something that can be heated up in a microwave or eaten cold...and I basically have a sandwich for dinner.

    I miss real food sometimes (but not the prep work involved!).

  • @Saragoeswest - it is getting very annoying to try to find food that both fits in my GD diet and that DH will actually eat.  At least he knows better than to ask me to make him more food. 

    I would understand the occasional not liking of dinner - especially since we try new recipes out on a regular basis.  Sometimes, the new recipes just don't taste at all like what you think they would and we both decide to try dinner over again (ie, call out for pizza before GD).

    I am the same way with peppers -
    can't do bell peppers in large quantities for some reason.  I LOOOOVE chili peppers, poblano peppers, and pretty much any other kind of peppers though.  In fact, we had stuffed poblanos on Friday night!

    ETA:  should have said "can't" do bell peppers.

  • We subscribe to a weekly meal planning service since I never find time to do it on my own and end up eating cereal or PB&J for dinner otherwise.  They've been killing it this summer with delicious ideas.

    Last night we had herb crusted chicken breasts with wild rice pilaf and an apple-celery slaw.  I cooked two pounds of the chicken and saved half for Wednesday night's dinner.  

    Tonight is brown butter scallops with tomato salad and sauteed corn.  

    Tuesday will be grilled chicken sausages and summer squash succotash.

    Wednesday we'll have the leftover chicken over wild rice apple salad, and Thursday will be a zucchini bake with avocado salad on the side.

  • Just reading all of your plans is making my head spin - it all sounds like so much work right now.  I think DH said one of our friends is coming by tonight to drop off a dish that his wife made for us, so hopefully that's stuff DH can eat with all his weird diet restrictions (no tomatoes, white potatoes, peppers, eggplant, or pepper-derived spices (cayenne, curry, paprika, etc)).

    I have a CSA basket full of stuff sitting on my counter, and very little motivation to do anything with any of it.  Last week my mom made me a squash casserole with all the squash we had, and I'm still eating that (DH and DD don't like it).

    We're having kale and beans with some kind of sausage and pasta one night this week.

    DH told me chicken breasts are BOGO at our grocery right now, so I guess I'll get two packs of those and we'll have some grilled chicken on salads. 

    I might grill some of the zucchini and yellow squash in that CSA basket to have with grilled chicken one night, with one of those prepared rice sides, maybe?

    I need an easy recipe to use a whole mess of cucumbers - simple cold prep pickles, maybe?  Anyone have ideas?

  • Wow, I'm amazed you all actually have meals planned for the whole week! I can never think more than a day ahead. Rather, I usually make a batch of something and then eat it two or three nights in a row.

    Anyway, all your dinners sound GREAT. Way to go, mamas.

    Let's see, I'll try to add something... I'm thinking of making lentils/brown rice/veggies flavored with bacon sometime this week... and we just finished up a big batch of Mexican black beans that I was stuffing into corn tortillas with cheese and tomatoes for like, the last three nights in a row... haha. I also just finished up a batch of chicken breasts that I baked with evoo, chopped garlic, lemon juice, and hot pepper flakes... I was slicing it up for sandwiches, etc. Tonight's veggie was garlicky braised kale (again!) from our endless garden supply.

    What is this weekly meal planning service? Id love to know more about it, or how to get it! 

    It is AWESOME. It's called The Fresh 20. We've been using it for about a year and a half. You buy 20 fresh ingredients each week - mostly produce and lean meats/fish. They also tell you if you need certain pantry items for that week, like pasta, rice, oils, etc. They give you a prep guide that outlines what can be made ahead of time, so I usually shop on Fridays and then spend an hour each weekend prepping veggies, cooking rice, making marinades, etc.

    The recipes are easy to follow and sub stuff out if you don't want a particular ingredient. They do lots of grilling in the summer and crockpot meals in the winter.

    It's usually three nights of meat, one fish, and one vegetarian meal. They are such great recipes and don't usually take more than 30 minutes max on the nights you cook since everything is already prepped from the weekend.

    I seriously cannot say enough great things about it. I signed up for it when they were pretty much a brand new startup through a groupon, so it only costs $25 for the year and they've let me renew at that price so far. I'm pretty sure the prices have gone up a bit but they do run some good sales. Totally worth it for us because I love to cook but hate wasting food, which I always ended up doing when I did my own meal planning.
