What's cooking, ladies?

It doesn't get me often lately, but I have been attacked with the cooking bug today. I want to cook all the things!! Sullivan and I are going to the grocery store shortly and then I am going to make homemade jalapeño corn hummus and attempt BBQ cheddar chickpea veggie burgers before work tonight. Yum!

What's on the menu for y'all? (Please don't exclude your yummy takeout options, tired mamas)

  • I made pork bbq sandwiches last night and chicken cordon bleu pasta tonight! So excited.

    Last night I made berry scones and greek pasta salad, which I am currently devouring.  Tonight is a social dinner out, then tomorrow I may make pretzel dogs if I feel ambitious.  Otherwise, leftover carnitas on baked potatoes.

  • I'm not sure what I'm making tonight yet. This week I've made honey lime chicken and fried rice (not for the same meal!) yesterday I made an apple crisp in the crockpot, which then turned into my breakfast for today

  • Ropa vieja (Cuban pulled beef for those unfamiliar with it). It's in anticipation of our trip to Miami tomorrow to introduce LO to his great grandparents and many many cousins!

    Beef satay for us tonight, avec brown rice and grilled veggies.
  • @sakm don't crash yet, whether this attempt is successful or not has yet to be seen! Homemade veggie burgers are notoriously hard to get right.. I'm optimistic though!

    Husband is gone at training for the Army so I never cook when it's just me. Turkey wraps and turkey for dinner... Every night... Yum...

  • We got fresh pasta, tomatos, basil and yellow water melon at the farmers market to have for dinner.
  • Monday: Chicken ratatouille
    Tuesday: BFD (breakfast: homemade waffles, bacon, eggs, fruit)
    Wednesday: "Sushi" wraps (rice, nori, avocado, sweet egg, spicy chicken)
    Thursday: Roasted pork tenderloin and veggies
    Friday: Chicken tacos!
    Saturday: Out (There's a German pub that does amaze-balls take out)
    Sunday: Pulled pork

  • Tonight I'm making penne with vodka cream sauce. Super easy and super yummy. I'm not a planner when it comes to dinner, whatever I feel like I want I stop and get the ingredients on my way home from work!

  • Not sure what I'm going to throw together for dinner quite yet, but yesterday I made banana bread bars with browned butter frosting, and I'm currently anxiously waiting for my beer bread to finish baking in the oven! I'll probably pan sear some beef and make some rice and gravy and serve the bread with it.

  • Yesterday was Ranch Cheddar Burgers. Tonight we are eating out with friends. I think tomorrow I will make shrimp stir fry. We are moving, so I'm trying to make meals with food we already have in the house!
  • M - cheese tortellini with sautéed veggies

    W - boca burgers and salad
    Today - Italian sausage with onions and peppers and French onion potatoes
    F - pizza! :) if we're ambitious, grizza (grilled pizza!!)

    Scratch that. We are having garlic for dinner. I just spilled half a pot of garlic powder on the beef.

    Serves me right for being too lazy to crush up some cloves.

    @hlm184 - will post later when no baby attached to boob. 
  • On Tuesday morning I threw three large chicken breasts, a jar of salsa, can of rinsed and drained black beans, and some taco seasoning (I make my own but you could use a mix) in the crockpot for about 8 hours on low. Then just shred the chicken. Makes a ton of shredded chicken for salads, tacos or whatever.
  • @hlm184‌ will post after dinner! This is the first time I 1) make it in the slow cooker and 2) alter my grandma's recipe. I don't want to pass it along if it doesn't do my cuban heritage justice!

  • Tonight is home made pizza, I also made 2 loaves of zucchini bread, we have zucchini and summer squash coming out our ears - also pureed some and froze it for baby food this fall. One pot mexican skillet is tomorrow.
    Sat - BLT salad (the only meal we make that has meat, turkey bacon!)

  • Y'all clearly don't have 3u4 at your houses! Pork dopiaza with rice last night and pizza tonight, as we met with a lawyer this afternoon about starting our will (finally!). I wish I could find more time to prep for dinners, but it's just not gonna happen. Plus, my 3 y/o has been wanting to help prep lately, so everything takes at least twice as long.

    Our new favorite is Grilled Pork in Pitas. It has an amazing picante and yogurt sauce to go with it and was super tasty. Tonight is going to be Beef Stroganoff.

  • @ambarnett1  - this has taken very little time.

    @hlm184 - so I'll tell you what I did, rather than what the recipe says.  I never follow a recipe.

    I took an arm roast, chopped it into big chunks and have had it on the stove for about three hours this afternoon in chicken broth, onions, soy sauce, chili powder, garlic powder, turmeric, ginger.  The meat is pretty soft now but will go on a skewer (sp?).  Am going to grill on high to crisp up the outside.  That's it.  It tastes good so far. Hopefully it will hold together on the grill.

    I bought tomatoes and yellow watermelon today too!
    Did we go to the same farmers market? Lol. Sadly the watermelon was bland. The one I got last week was awesome.

    I think we're on opposite coasts - so funny the same crops are local.

    I had no idea yellow watermelons existed until a year or so ago when we moved next to a farm. I was so excited for them this year! They still kind of blow my mind.
    Have you seen the square melons? Google it.
  • Since so many people are having pork- easiest recipe ever: 1-2 pounds of pork in a crockpot full of root beer, cook all day on low, drain & add 1/4-1/2 bottle of BBQ sauce & pull. BAM

    That sounds amazing! Do you cover the pork in root beer or just a couple cans?
  • @TallaB‌ the veggie burgers got bumped to today cause I ran out of time before I had to go to work, but here's the recipe! Huffington Post had a great article with a ton of veggie burger recipes. I wanna try them all. I'll let you know how it comes out!

    You can cover it or leave a little sticking out & just flip it once. So good & so easy!
  • So, um, that BBQ cheddar chickpea burger recipe is bangin, btw. DH even stole my leftovers! We will be having that one again!
