I was wondering this myself.
I'm not a hunter, and DH is not a hunter, but my dad was and his whole side of the family is, so I grew up around it. And I think it's tough to say they don't do it for sport (it's not like they would starve if they didn't hunt) but they absolutely eat all of the meat.
I do have a problem with going to Africa and killing lions just for the fun of it, since usually those people aren't then consuming the lion. I don't know, maybe that makes me a hypocrite?
Anyway, all the above being said, I couldn't do it, but it doesn't bother me that others do.

All the meat is eaten and I know we've saved a lot of money by doing so. And as an interesting addition, not only as mentioned by @cdhaslag can meat be donated, but here in NC turkey feathers can be donated to Native American tribes for ceremonial use which I think is pretty cool.

As far as hunting goes....yes we consume the meat. We also donate it to families in need in our local community. These families don't have the luxury of snubbing their noses at certain sources of protein like so many of us do and are elated to have it. As a side note, I grew up in a home where our source of red meat was deer because my mom is allergic to beef. So instead of having ground beef hamburgers, we had venison burgers.
I would also say that many would be surprised to know all the benefits that hunters/hunting does for our wildlife habitat here in the US. When you hear of reintroductions of new species, that is almost always funded by fish and wildlife divisions which receive their monies from hunters through license purchases or hunter donations. For example, just here in Kentucky over the past 10 years, we have reintroduced elk and bear that are both flourishing. Honestly, even though anti-hunters think hunters must have no respect for nature because they shoot poor "Bambi", majority of hunters admire and appreciate wildlife more than most. They can make the distinction between animals and humans, however. That is the difference.
Lastly, I despise any hunter that does not harvest humanely, poaches, and doesn't follow the rules. These "hunters" are criminals and assholes.

I am anti-hunting when it comes to the exotic game ranches where African animals are bred and stocked on a large piece of land and for a high price, you can have a trophy animal on your wall without leaving the country!
All that said, I hate seeing pictures of smiling faces holding up a dead animals head. Be honest here folks, the larger the antlers, the grosser the meat. Most of those trophy's make shit food so don't say that is the only reason you hunt.
Is it not common sense that the older a buck, the larger the antlers? We eat primarily does.
ETA: I looked back at the photo you posted. That buck is at least 4 years old. Maybe you just haven't had good meat if he doesn't hunt does so you don't realize how gamey old meat is in comparison.
