M- Leftover crockpot pulled chicken sandwiches w cole slaw and potato salad, T- Chicken pot pies, W- crockpot buffalo chicken sandwiches, Thurs- Tacos, F-Taco quesadillas w roasted red pepper and tomato soup or leftover buffalo chick sandwiches, depending on mood.
Those look amazing. I made the sausage and cheese one pot meal that a lot of people have posted and while it does taste great I haven't made it recently because it is pretty unhealthy and I'm trying to lose weight. The ones you posted look like they are pretty low calorie. Will definitely be trying!
For a while I quit reading the Monday meal plans. And here's why: I would read them and go "ooh, I want THAT instead of what I was planning!" And now I'm contemplating changing out leftover sandwiches with BBQ chicken biscuit cups. I have zero self-control!

Exactly! I made that one too, but I have no business eating cheese covered smoked sausage, lol. The pasta one is one of my new faves...light and perfect for summer. I actually cut some of the cheese, added more tomatoes and used ww pasta. I can't wait to make it again!
@PrivacyWanted : I at least limit my changes to what I have in the house! Lol. Btw, I think you may have been responsible for Buffalo chicken crock pot sandwiches. My Lord, those are life-affirming.
