Mass Mac and Cheese Recipe

For our 4th of July Party I'm having 90% cold sides (potato salad, pasta salad) and chips/dips.   The only two hot sides I want to serve are baked beans and Macaroni and cheese (mostly for the kiddos) and I have a sterno buffet serving tray to put these out in to keep them hot.

Does anyone have a bulk macaroni and cheese recipe I could follow?   Maybe even a slow cooker one that I could make the morning of if I start it at like 8am?  We could have about 12 kids throughout the day and some adults may eat it, so I want to have a good amount.   Maybe I could make one batch in the slow cooker over night and another the morning of?  Or just a massive batch in my huge stove top pot...?

  • This is my favorite recipe. I made it for G's birthday.


    1 (8oz.) package elbow macaroni (about 2 cups)
    1/4 cup butter or margarine
    1/4 cup all-purpose flour
    2 cups milk
    8 ounces Velveeta cubed (I usually use 4-6 oz of velveeta and 1/2-3/4 cup of shredded cheddar)
    1 tablespoon minced onion
    1/2 teaspoon salt
    1/2 teapsoon Worcestershire sauce
    1/4 teaspoon pepper
    1/4 teaspoon dry mustard
    2 tablespoons Italian-seasoned breadcrumbs
    Butter or magarine



    Cook macaroni according to package directions; drain. Place in a greased 2-quart baking dish; set aside.

    Melt 1/4 cup butter in large heavy saucepan over low heat; whisk in flour until smooth. Cook 1 minute, whisking constantly. Gradually whisk in milk. Cook over medium heat, whisking constantly, until mixture is thickened and bubbly. Reduce heat and add cheese, onion, salt, Worcestershire sauce, pepper and mustard; stir until cheese melts. Pour cheese mixture over macaroni, and mix well. Sprinkle with breadcrumbs, and dot lightly with additional butter. Bake, uncovered, at 375 deg. for 30 minutes.
