@MamaFantastic I do the same thing with my chicken boobs! My dogs love it as I save the water used to boil the boobs & they get it in their bowls that night.
Tonight I took some of the shredded chicken with sliced sweet peppers, onions, garlic & sautéed them up with some spices: chili pepper, cumin & cayenne. Added some Amy's Refried black beans. Put it all on a tortilla with cheese & gauc....super yummy & really easy!
Right now we mix freezer meals with fresh. My crockpot gets a lot of use. We also have one pizza or take out one night a week. Off the top of my head We do pulled pork, buffalo chicken sliders, stir fry, fajitas, penne, lasagna, shepherds pie, meatloaf, chicken curry, fish tacos, quiche, kielbasa bakes, roasted chicken, grilled cheese, naan pizza, and baked fish. I make sure we get protein, a veggie, and a starch.
We eat at the table with a cloth tablecloth and use cloth napkins. It's one of those little things that helps to keep us feeling human.. Plus we want to keep good meal habits for when Paul is old enough to eat with us.
Taco salad bowl (chipotle salad bowl knockoff): use shredded lettuce, black beans, shredded cheese, pico de gallo, onions, avocado, salsa, eat with tortilla chips or a just a fork ...add whatever else you want. Takes a few minutes to make and is delicious and healthy!
