MFM Appointment 10/8 - confirmed my cervix at 2.1cm - putting me on Progesterone for a week.

  • We are having lasagna also - but I just bought a frozen one to stick in the oven this time, so I don't get any credit for making dinner!
  • Tell me about this "pull apart" pizza!!! (If you are making it, if not...where can I get some??)
    I defrosted meat to make a turkey meatloaf but I'm thinking to make that tomorrow because now I might need pizza tonight!
  • We're doing quesadillas tonight. I feel like we've upped our takeout a lot since Elise arrived also. But we're rarely going to restaurants, so I bet we're still spending less than before she arrived. 

    I'm terrible at cooking simple things. I tend to make really involved dinners, which is a disaster now that I have a newborn! So I'm attempting to scale back and make easy dinners. But I don't like can of soup/package of flavoring type recipes, so it's my challenge to find simple, yet natural and healthy recipes. 
  • shrimp and asparagus stir fry. 

    I was just sitting down to make my meal plan for the week, so good timing!

  • Crockpot chicken tacos. It smells so yummy! It's easy 4 chicken breasts (can be frozen), one cup of salsa, one can of cream of chicken soup, packet of taco seasoning. Once cook shred the chicken and add a cup of sour cream.

  • Chicken tikka masala and pita...both made and frozen while pregnant.

    Funny, I just said to DH last night that I haven't made this in almost a year. He is looking forward to the day I make it again, almost as much as I am.

  • DH screwed something up at work and missed a meeting this morning.
    Luckily for him there was a second meeting scheduled this afternoon. So he went to that one and got home from work early.
    We are ordering wings. (Haven't had wings in about 4 months)
  • Since having DD I have steppes it up and really plan our meals for the week, mostly because it isn't an option to just pop in and out of the store quickly. One of my favorite things to do when LO sleeps is look for recipes on Pintrest.

    Last night we had fiesta chicken salad, tonight was chicken broccoli pasta and salad, tomorrow is turkey paninis and roasted broccoli, Thursday is kabobs on the grill. This weekend we are attempting grill pizza... Hoping it is amazing.

  • We always do frozen stuff or BLTs, Brinner, Meatball subs, spaghetti ...  Its just hard to find quick recipes that don't have milk products!

  • We bake a lot of chicken and broil a lot of steak tips, then heat up some frozen veggies and make a pasta side. 
    Turkey burgers with frozen baked fries or pasta and frozen turkey meatballs are also common go-to's. 
    Oh and when we're feeling ambitious we bust out the quesadilla maker!

  • We had pasta primavera to use up all of the random veggies in our fridge. This time it was red bell pepper, asparagus, mushrooms, and zucchini. I use a little onion and garlic for seasoning and some liquid - today it was homeade chicken stock, in the past I've used vegetable broth, cooking wine, or just plain water. I threw in a can of garbanzo beans for protein and topped with a little Parmesan cheese.

  • I'm jealous of all of your meals and ambition. Making dinner regularly is one thing i haven't mastered since LO arrived. I used to cook a lot, but the evening is usually LO fussy time and I can't imagine even thinking of trying to cook during that time. Dh usually picks up fast food, or I simply forget to eat dinner all together. I'm starting to get a routine down with LO which has seemed to help, we shall see!

  • Fish cakes (MH's latest catch), fiddleheads sauteed in butter and garlic, a sour cream-wild leek sauce to go over both of the above, and a green salad. No recipes for the above, just from the brains of MH and I.

    Last night we had kibbeh and fatoush. I cannot cook Israeli food out of my head; the recipes are from the "Jerusalem" cookbook --- highly recommended!

  • @babylimas, sounds great! Especially the quiche-it would be easy to make at nap time. @LittlePigeon‌, we love grilling pizza. Get the dough nice and thin, and watch it, because it will cook fast. The crust turns out great when grilled! I've been pinning recipes like crazy lately. I'm ErinE683 on Pinterest, if anyone wants to follow me for recipe ideas. I'd love to follow others, too, for recipe inspiration!

    Honestly? I buy the salad mixes. :D my H loves kale and I don't like it. I try to make the salads myself and they are always just too fibery. I think the mixes use baby kale. You can massage the kale or something to make it more tender but that sounds like too much work for me for something I don't like. ;)

  • @bingbongsmama‌ salad isn't the friendliest way to get to know kale. In fact I'd say it's probably a good way to start off on the wrong foot with it! I might try first as kale chips: get a big bunch of kale, stem it, rip it into pieces, toss with generous amounts of olive oil and salt, then roast in a hot oven until crispy and brown around the edges.

    It does best with lots of good fat to balance its bitterness. "Beginner" ways to try it would also include in a cheesy soup, sautéed and added to an omelet, or steamed until tender and served with butter next to a heavier main dish (roasted chicken, mac n cheese, something like that).

    @babylimas‌ all involved in "massaging" it is putting it in a bowl with salt and something acidic (lemon juice or vinegar) and scrunching it with your hands (like mushing cookie dough) until it's soft and bright green. Only takes a few minutes and vastly improves it! I wouldn't eat raw kale otherwise.....

    Did you end up making it?? I did, and we really liked it! The only issue was that the pepperoni made it kind of spicy...hopefully LO is ok :/.
