Ok admittedly I'm doing this to get ideas. DH has been so busy lately that it's just been DS and I for dinner and I feel like I need to get out of the PB&J and hot dog rotation. What's everyone doing for dinner?

  • Crock pot pork roast, and veggies.. Idk what kind of veggies? I usually have a bag of small potatoes on hand to throw in the crock pot, but today I had none  :ar!

  • One of my easiest and favorite go to dinners is barbecue chicken and Rice-A-Roni. I make the chicken with some thawed out boneless skinless chicken breasts. I slice it up and throw it in a skillet with some barbecue sauce. Just move around until it's done and it's great. And then Rice-A-Roni of course is super easy. I usually serve it with either steamed broccoli or can of green beans.

    Tomorrow though, my nephew is spending the night at our house to celebrate his birthday. So I'm making him a special dinner of barbecued ribs with mashed potatoes, corn on the cob, green beans and Hawaiian sweet rolls. I've never made barbecue ribs before, so this'll be fun. I'm actually going to make them in the oven. He also requested cheesecake for dessert, so I'm going to make that today.

    DS weaned in April 2014
    Taking a break from herbs and just riding the healthy train.  
    Planning medicated cycle end of summer.  FX I get KU before then!!!

  • I have a recipe section on my blog. It is broken down in meal types (dinner, breakfast, dessert. etc.) also by meat type, and by cook type (crock pt, non-crock pot). I have added a star system and also note which meals are "Skinny" (but you would never know by the taste). It is my go to place when I am looking for something to cook :)

    April/May 2014- Benched due to cysts/enlarged ovaries
    June 2014- 50iu follistim + trigger + progesterone + IUI = BFP!!
    (10 million post wash 60% motility, 20mm/19mm follies)
    Beta 1- 85 Beta 2- 2,752 - EDD 2/27/2015

  • I have a crockpot. It was a wedding gift. I made corned beef and cabbage with it. However, it has not been used again. WTH can you make it this thing other than soups or roast?!!? Maybe Im not looking hard enough for recipes... I also suck at cooking. But can bake like a mo-fo.

    Omg I love the crockpot on busy weeks. Google or pinterest!
  • We had ham and potatoes, green beans and broccoli. I'm thinking tacos tomorrow, but that will probably change tomorrow morning. :)
  • @mommalawyer, I love my crockpot.  It is great for soups, stews and chili, but I actually use it more often for chicken.  I will throw two frozen chicken breasts in there with a little water and some seasoning (usually garlic powder, onion powder and seasoning salt) then cook it on low for 6 hrs or high for 3 and the chicken comes out totally tender and super easy to shred.  Then I use it in a simple casserole or with pasta or put it on a pizza.  It's my go-to way to cook chicken!

  • Hmmmm. These sound like viable options! And very little screw up odds. I'm gonna have to put some more effort into this. The corned beef and cabbage turned out amazing & all I did was put it in there with some slices. If everything else is that easy, it's worth a bit more effort!
