Just thought I'd barge in here and (based on the first page, which I skimmed), play devil's advocate. I don't see any issue with installing cameras in your own personal residence and not telling the nanny they are there. I mean, isn't that the point of the freaking cameras? What is the point of having cameras if she's only going to act a certain way BECAUSE of the cameras?
@HilarityEnsued -- Here is my thought: if you have cameras in your house, they are intended to record people whom you have NOT invited into your house. To me, that is the purpose of the cameras -- not to record the people whom you have invited in your house and not tell them.
Where do you draw the line, if you truly believe this is ok? Is it acceptable to record your friends and family when they come over too? Without telling them? How would you feel if you found out that this was happening to you?
ETA: To be fair, though, if I had a nanny and had cameras I wouldn't necessarily tell her where the cameras are.

Actually, you are wrong. In some states in a public place of business, a boss DOES have to notify you of cameras/closed circuit due to liability issues.
Either way - if you want to install cameras, that is your prerogative (albeit I still think it's shitty you don't tell her) - I personally think though that if you are really concerned that the nanny would do anything that it would be better off to disclose that you have cameras installed but are not willing to say where. That way the nanny is informed she is on camera and you will have the safety of her not knowing which rooms are being filmed. The benefit to this is that (and this really is only if you think something would/could happen) knowing she is being filmed, she would be less likely to do something maliciously. If she doesn't know the cameras are there and she does want to maliciously harm your child, the fear of being filmed would not be there.
To the other points - I know you said you don't use lotions on LO's face, but do you ever use them on any other part of LO's body? Hand, arms, legs, etc? (If no - then why the eff do you even have them?!) If yes, and there is no reaction to LO's skin - chances are that the lotion she put on LO DID NOT cause the breakout. FTR, my 10 week old has some pimples and OMG no lotions have been used! (what is this sorcery!?)
Overall I think you are micromanaging. I think you need to sit down and have a glass of chill the fuck out, and have some faith. Unless this woman gives you a reason to think she will seriously harm your child, there is no reason to be so cray-cray. If there is a reason you think she would, then you are an idiot for not already firing her ass.
Also, talk to her about writing the times down again. Explain this is a requirement of her job, and explain why it is so important.

@HilarityEnsued I just want to point out that OP did not say its a nanny cam. She said she installed two cameras to check up on her LO throughout the day.
Well to me the line is quite clear. The line is that there is a person who I employ to safeguard my child when I'm away. No, I would not be recording friends and family. I can't see any point. If I was being randomly recorded while, I don't know, having sex with my husband, I'd be pissed. But if my employer chose to record my actions while in his employ at his own place of business, that's his perogative.

I'm sorry but I agree one hundred percent that you secretly videotaping her is messed up. You need to be able to trust those who you leave your child with or it will not be fun for you and you will loose your care provider probably without much notice. As a veteran mom here who has been hiring care providers for 8 years now if your hiring process is done correctly your odds of something horrible happening are extremely low, if your using an agency pick your agency wisely ( they may also drown on your videotaping without knowledge and refuse to send you any more of their staff) if your hiring privately perform background checks and communicate either way. As for the lotion, when you were younger and had dry skin did you ask your mom if you could use lotion or just put some on? My money says you just put some on to stop the itch, same concept here.
Also you hired her to care for your child which she guinely does because she cared enough to make sure your child was comfortable. No one is absolutely perfect but one thing for sure Is your on your way to driving yourself off the deep end the rest of the way
