Cinco de Mayo party?

So DH planned a huge BBQ at our house on May 3rd so it has been requested that we make it a Cinco de Mayo party.

We are going to do a taco bar with all the fixings. Have chips with salsa and guac, refried beans, grilled plantains, some Mexican cornbread, and a tomato & cuke salad (not very Mexican, but fresh and easy). Any other suggestions? Also, any easy dessert ideas?

We are going to have about 50 people (kill me) so I don't want anything too labor intensive.

    I've made margarita cupcakes before that were awesome, they had tequila in them. Let me see if I can find the recipe...

    Eta: here it is. Also, I didn't end up making the frosting, I bought lemon flavored frosting and it was great.

    I think they would taste good without the alcohol too if you wanted to make some without the liquor.

  • If you're already counting on 50 people, you won't even notice my family of 4 enjoying the celebration! Sounds delicious! 
    Definitely not authentic, but everyone loves Rice Krispie Treats if you need a super easy dessert option, or add some mexican spices (cinnamon or a dash or two of cayenne) to brownie mix.   • You can't have a Cinco de Mayo party without Flan! I have no idea how easy or difficult it is to make, but it's very Mexican!

  • Cinnamon chips.

    They make margarita jello that would taste good in jello cake or simply in cubes.  

    Sounds like great fun.

    Flan is easy to put together, but not easy to keep. It can flatten fairly easy.

    Cream cheese and jam filled and/or chocolate empanadas topped with cinnamon and sugar.
    Small cup of vanilla ice cream with cinnamon chip on top.

  • There are few things I find grosser than flan.  Bleh.

    How about a tres leches cake?  They're delicious and easy to make.  I've even made them into cupcakes.

    Also, I've made dulce du leche cheesecake for probably 7 or 8 years now and it's a huge hit.  It's one thing people ask me to make all the time.  And it's simple...make a regular cheesecake.  Add in around 1/4c dulce du leche.  Then when it's done baking and cool, dump the rest over the top of the cheesecake.  Voila.  :-)

    My co-worker makes cowboy caviar.  Holy shit is it good.  Texas caviar = cowboy caviar.  Delicious.  also, i'm pretty sure they sell it at Trader Joe's this time of year.

    This looks pretty simple as a dessert. It fits the theme well enough too.

    The booze I have under control. I do have to stock up on tequila, but the Costco in the city sells booze cheap - yay!
