@ludali and @TrueBeliever925 I am 1/4 Polish. Really craving homemade pierogis now! Plus sad since I'll be away for Easter when my Grandma makes them and hers are the best. Might have to make some using her recipe.
Monday: leftover fiesta chicken, rice, broccoli, salad Tuesday: pulled pork quesadilla (leftovers from pork sliders last night), spanish rice Weds: not sure yet, but I have to cook something cause MIL is coming over for dinner, yay! (insert sarcastic eye roll) Thursday: going to Dallas for check up with surgeon, probably take out from In-n-out burger, eaten on the drive home. Friday:venison steaks, mashed potatoes, green beans, salad Saturday: leftovers buffet

It looks so good. DH hates eggs so this can't be a dinner for me I'll have to make it for a potluck or something soon. Or just for myself for breakfast
It would be an embarrassment for me to post anything on this thread. In my defense I work nights Tuesday and Wednesday and every other weekend so I eat left overs, canned soup, or something super easy and Dh fends for himself.
But after reading this thread last week I was inspired and actually went good grocery shopping yesterday and make pot roast today in the slow cooker and bought stuff to make chicken parm Thursday and lime cilantro chicken from Pinterest on Sunday! Trying

@Learntoswim18 how do you make your honey mustard chicken? I use a weight watchers recipe that calls for cereal to make it crunchy and it's SO GOOD
I go very basic - teaspoon honey, tablespoon (or 2) whole grain mustard, squeeze lemon juice (or 2), splash olive oil. It marinates almost all day since I do prep during morning nap. I then oven bake the breasts on a rack to keep things healthy.

It calls for petite tomatoes, and a can of green chilis, but I just use Rotel tomatoes. It makes it a little bit spicy.
