I usually pump both sides because I might not get enough if I just pump one side. I may not pump them for the same length of time though, it just depends.
ETA: DS does not consistently nurse from one side, he sometimes does both.
LO feeds off of one side at a time but I pump both at work. The first pump of the day is usually unbalanced because he ate from one size but after that I usually get 2-2.5 oz from each breast which equals one bottle feeding for him.

So if the goal of each pumping session is to replace one feeding sounds like I should only pump one side if I get enough for a full bottle and would only pump both if I need to combined them to create a bottle?

Only if you are going to pump exactly how many times a day your LO would nurse and you intend for her to have more small bottles throughout her daycare day. My LO until around 8 months would nurse every 1.5-2 hours during the day when we were together but only took a bottle every 3-4 hours at daycare. If I only pumped 3 times a day, approximately every 3 hours, and only pumped 1 side, I would not have enough for her bottles. You'll really have to see how much you pump when you pump only one side. I don't have any issue with pumping both breasts at work and sometimes only feeding 1 side at home.
LO always nurses ever 1.5-2 hours when with me, takes a bottle every 2-3 hours while I'm away, but I pump every 3-4 hours at work. Even though LO rarely nurses both sides, I pump both at work. I typically get enough for 1 feeding or an ounce or 2 more per pumping session.
I don't know if that's the best way to do it or not. Pumping both sides is what works best for me. I have never had to worry about an oversupply either. Hopefully more of the experienced ladies and EP's can give some good advice.
