XP - NWMR: Making dinner for sick friend - need advice

A friend has been going through chemo and I am going to drop off a dinner for her and her family.  The problem is one of the side effects of chemo is a horrible metallic taste and anything that has been cooked in or come into contact metal.  I also have to be able to drop off whatever I make in a disposable container, or at least something I don't need back.  So I have a glass pyrex I can make something in, but I need to be able to transfer it to something else before I deliver it. FWIW, she is trying to eat as many fresh organic veggies an avoid meat, but I also am cooking for her two kids and her DH who are not necessarily following the same diet.

 I have to go shopping during my lunch break today and I am kind of drawing a blank, so any suggestions?

  • I would buy some cheap tupper wear at the grocery store to put it in, they have all different sizes. No advice on what to cook, I'd probably just make whatever my best meal was.

  • What about a veggie lasagna?  In general, I think any kind of baked pasta dish reheats well and is a crowd pleaser.

    I would do lasagna, but it seems like it would end up a mess if I make it and then try to transfer it into tupperware containers before dropping it off.  Unless I can manage to make it tonight, let it cool over night, then cut it in the am before taking it over.

    Tupperware makes baking dishes that are not foil, so hopefully that would resolve the metallic taste issue.  I was thinking you could bake it and take it whole in the pan.

    You could do baked chicken parm.  That would be easy to transfer to a tupperware.  And send a box of pasta and some rolls.  The rest of the family could eat the pasta, at least.  Send a big container of cut up fruit, too.  That's an easy healthy snack.

    What about a soup? Potato leek is generally a calming easy to digest soup.  My recipe is to put a pat of butter or olive oil in a soup pot and thinly slice one or two leeks and saute in oil/butter until soft, add washed/halved yukon gold potatoes and cover with chicken stock (you could use water or veggie stock) Bring to a boil and simmer for about 30 minutes. Add salt/pepper and a touch of milk or cream.  Puree - easiest if you have stick blender but you can put batches in a regular blender of food processor.

    I can't make anything in a metal pan - otherwise that would be a great idea.

    That would be excellent - I did not know that.  Thank you!  That seems like the easiest solution.

     

  • Chicken noodle soup made in a slow cooker/crock pot if you have one!  You could add a salad and some bread as well.

    (And I think it's great that you're bringing her food.)

    If you can't find them I have seen glass dishes (like pyrex) at Dollar Tree.  I'd just buy one to give to her.

  • I just made stuffed shells for some friends who just had a baby. I used a recipe I found on Pinterest. They are so easy and delicious. You could use organic ricotta cheese and organic fresh chives.
