Favorite "wing it" dinner

DH and I had a busy afternoon, and we both already had takeout once today, so we had one of those "fend for yourself and eat whatever's in the house" dinners. I had an English muffin with peanut butter, which was delish, but my favorite quick and easy go to is grilled cheese. What's yours?

  • We do a pasta bake. Al dente pasta, quickly browned red meat, pasta saunce and chopped peppers. Then bake for 30 min. and go. Also those Stauffer's lasagnas as super delish. We always have one in the freezer.

  • Quesadillas or pita pizzas
  • Egg sandwiches or this Chicken Crescent roll up thing. Just can chicken breast with a little pepper and onion powder rolled up in a Crescent with cream of chicken soup and cheese on top bakes 20 mins. So easy
  • I feel like we eat this way every night. "Crap, it's 6:30? What do we have?" haha.

    Our go tos are burritos (shells, refried beans, cheese, sour cream, and salsa are always on hand in this house), quiche, and pancakes.

    -My step-daughter is 12 years old.

    -BFP #1 on 9/2/12, D&C 10/18/12 no heartbeat on US @ 10 weeks.

    -BFP #2 on 1/7/13, R was born on 9/22/13 via C-Section

  • Fried egg sandwich
    Grilled cheese with syrup for dipping (Don't knock it til you try it)
    Cereal
    My favorite is whatever kind of pasta we have with just olive oil, Lowry's garlic salt and pepper.

    All of these things are items we keep in the house no matter what.
  • If we're in a pinch, I usually resort to fridge/pantry soup.. some combination of veg stock + whatever fresh veg + whatever legumes/protein we have on hand.  

    Scrambled eggs and hashbrowns are also a quick, easy, and tasty dinner.

    My absolute favorite dinner even when I'm not in a pinch I call EZ tuna casserole. Its kraft Mac n cheese, a can of tuna and a can of peas. A little onion powder and pepper to taste. It's simply A.M.A.Z.I.N.G!

    Edit because my phone doesn't like the word kraft

  • I like to make english muffin pizzas. Or mac cheese. Or a baked potato w/ cottage cheese on it. Or pretty much anything with cottage cheese. It's a staple in our fridge.

  • Cheese and crackers, apple slices with honey/peanut butter, pretzels, hummus, and red wine.
  • Tacos, popcorn, pb and j, breakfast foods and club sandwiches. Friday night has become taco night.
  • If it is just me, I go with a fried egg sandwich or toast with peanut butter.

    If it is a last minute meal for DH and I, we always try to keep dried pasta and jarred sauce in the panty for emergencies. And I usually have at least one freezer meal from TJ's on hand.


     

  • We always have stuff to make pancakes and eggs and I can make that in like 5 minutes.

  • If we are fending for ourselves, I nuke a sausage link (short one) and cut it up into a small bowl of Bush's baked beans.

  • Stir fry- frozen veggies, frozen chicken teriyaki meatballs and minute brown rice

    Frozen ravioli and jar sauce

  • If you cook up some kielbasa and onions, take a small container of sour cream mixed w 1 can of cream of celery soup, put it over the onion and kielbasa once the onions are soft, cover and let mix/simmer for a little and throw that over rice.....it's sooooooooooo easy, hearty and yummy
