Meal Rut

I am in such a rut with meals lately. I feel like for dinner I make the same few things, just bc they are quick for hectic weeknights but its getting old. Also, I want some new ideas to bring for lunch to work every day! I am over sandwiches.  What are some things you do to make weeknight meal prep quicker/easier? I get home around 6pm...DS usually is hungry almost right away so I really dont have more than 30 min to get everything together and ready. Please share any/all tips!

  • Pintrest changed my life. There are tons of great recipes on there, lots of easy ones too! As for helping with the hungry toddler, I usually let her help me cook and she has a little snack of whatever we are cooking (like raw veggies or a piece of cheese). I figure even if she doesn't eat as much dinner that she got something healthy in her at some point in the evening!

  • My mom recently gave me a book of my favorite recipes from my childhood. They have been a hit with my kids. 
  • I have been trying to do more meal planning and prep work in advance.  I will often make a couple meals in large batches that I can freeze and reheat - things like soup and chili.  I will also buy the ingredients for a few meals that I can prepare in under 20 minutes...things like fajitas, pasta, and stir fry.  

    If you cut up some veggies on the weekend or in the evenings, you'll be more likely to add them to your meals.  :)

  • At my old job I used to have limited time to cook dinner.  I did a lot of prep the night before.  I would even put together the whole meal the night before that I way I just had to bake it when we got home.  Also, crock pot and freezer meals are great.  Don't be afraid to repeat meals.  If your family likes it and it's easy - have it multiple times a month.  Lastly, don't overlook "simple" meals.  Turkey wraps, hamburgers, sloppy joes, tacos are all fast meals to prepare but can be as satisfying as something that takes longer to make.

  • We definitely meal plan, and have a few cookbooks that we use when we get into a rut.  We also rotate some meals seasonally (grill more in the summer, do more soups in the winter, stuff like that).  I also make enough to eat leftovers, which H and I both take to work for lunch.

    I do a lot of prep on the weekends, including pre-cooking meat if I can for different recipes.  For example, I'll cook and cut the steak for fajitas ahead of time, or make the shredded chicken filling for enchiladas, make meatballs ahead, stuff like that.  It makes it WAY easier on week-nights to throw everything together.

  • I do a lot of Pinterest, crock pot meals and I also swap recipes with co workers. I cook a lot on the weekends to at least get us through the first half of the week.
  • I meal plan monthly, and I try to put a few new meals each month. If something goes over well, I add it to our regular rotation. I check the plan at night and prep for the next night. I have been using my Better Homes & Gardens cookbook because a lot of the recipes are pretty easy to prepare. I bring leftovers for lunch. I like to freeze chili and soup in individual portions. I like having a hot lunch.
