I need some meal ideas. I'm running out of ideas for miss Cooper and I'm tired of feeding her the same thing. She eats with us for dinner but I pack her lunch and feed her breakfast. Please give this tired chef mommy some breakfast and lunch idears.
For breakfast we do muffins (I make a batch and freeze them then thaw as needed), eggs, grits, french toast, oatmeal or quiche. For lunches I do ravioli, quesidillas, grilled cheese, chicken nuggets, meat loaf, hamburger helper, spanakopeida, and veggies (corn, broccoli, cauliflower etc). Her lunch is usually a variation of what we have for dinner the night before. It makes things a whole lot easier.
Spanakopita is a Greek dish. It's a phyllo dough stuffed with feta cheese and spinach and then baked. So yummy! I make them as appetizers and am picking up the stuff to make them today. (Assuming that we're talking about the same thing!)

@hijoi and @summergirl1211 Yes! Sorry for the spelling, I was in a hurry this morning to get out the door. I buy them pre-made (they sell them almost everywhere in the frozen food aisle) and then bake them. LO likes them and it is a great way to get some spinach into her.
