December 2013 Moms

AW: Nesting = Freezer meals galore.

So nesting finally kicked in at about 34 weeks.  Over the past few weeks I have managed to stock my deep freezer to almost full.  Here is a list of all the things I have made:
Granola bars (Trail mix, chocolate chip and peanut butter)
Breakfast Lactation Cookies
Peanut Butter Baked Granola
Meatballs
Marinara
Taco Meat
Meatloaf Cupcakes
Pasta Fagiole
Moroccan Chick Pea stew
Barbacoa Beef
Carnitas
Lemon Chicken
Orange Chicken
Balsamic Chicken and Vegetables
Honey Garlic Chicken
Jamaican Jerk Pork

I am so excited to have lots of easy options once DS2 arrives.

  • Wow, you're amazing! I am so jealous! We just stocked our freezer and pantry with stuff from Costco. That one-hour trip was the best I could manage for food-nesting.

    I would have done more prepared stuff from Trader Joe's or BJ's but I am going soy and dairy free.  I bet you have some yummy options from Costco.
  • That's is awesome. I had really good intentions but all I made was 2 pans of lasagna and some chili.
  • I wish I would've prepped more freezer meals like I did last time. We have done WAY too much fast food lately because it's easier.

  • Send me some because I haven't done anything to prepare for meals. Good thing I could live on cheese and crackers for days but my husband, not so much.

    Awesome! You're going to be soooo glad you did! I did this about a week before Archer's surprise early arrival and it's been amazing coming home to a freezer full of food, we've had no need to worry about grocery shopping or cooking.

    Also, Breakfast lactation cookies? I want to hear more about these!
    @mightymousy glad you guys are enjoying your meals.  I like the idea of not having to do too much grocery shopping in the first few weeks.

    Here is the recipe for Breakfast Cookies. The oats are a galactagogue and I add ground flax meal and chia seeds.  To give them an extra lactation boost you can also add Brewer's yeast.  I just add a little bit more applesauce to account for the extra dry ingredients.

  • I would have liked to do this but we have a side by side fridge and storing much isn't gonna happen. In a condo, no space for a deep freezer. Not horribly worried about it though, as DH has been the cook for the last 9 months. He won't have a baby attached to his boob, he can manage cooking some.

  • I so would have done this if I hadn't been on bed rest.  :(  Now I'm almost 40 weeks and have no motivation to cook other than for 'the now'.  I also need groceries.  Crap.  

    People keep asking what I need for baby and I really don't need anything.  Wish I had the courage to just say "bring us food".

  • That was a really good idea to make Christmas cookie dough ahead of time and freeze it -- if I can get my act together I am going to do the same this week!

    If people are asking then you should definitely let them know meals would be appreciated.  Most people would love to bring you something you really need.

    spinach & sausage stuffed shells
    chicken parmigiana
    baked mac & cheese
    pumpkin curry soup
    chicken enchiladas
    chicken & sun dried tomato penne
    Stove Top chicken casserole
    chicken & broccoli casserole
    pumpkin chili

    I've also made and frozen 4 kinds of cookie dough:
    chocolate chip
    peppermint sugar
    peanut blossom
    Italian ricotta

    On top of the list of crockpot meals I have (with recipes and ingredient lists on hand), DH's parents coming in the first week, and my parents coming in a few weeks later, we're going to eat like royalty in the beginning...because we certainly won't feel like it, I'm sure! :)
    Awesome job @imrachellea !  It all sounds delicious.  I forgot I made some pumpkin chili too.  I used ground beef along with the pumpkin.

    You guys are super fancy. I tried doing this but ended up mostly blanching and freezing veggies for side dishes from farmers markets. Now I have enough frozen veggies to last every day for a month....and DH was like , "you know you can just buy frozen veggies from the store...it's just as good." :(( no!! No it is not the same!!!!

    But thanks for sharing the breakfast cookie recipe, I am definitely going to try to make this before lo gets here!!

  • You are wonder woman! I have nothing pre-made :( going to the store today to get stocked for after we get home later this week with baby. I think this post inspired me to at least do some last minute prep! AHHH!

    This is my freezer too. Frozen berries, veggies, and some cookie dough. Not incredibly helpful, but no room for anything else!
