Dairy free mini pancakes or french toast sticks, or mini waffles?

These all seem to be pretty popular at LO's daycare. We're keeping her dairy and soy free (MPSI). She'll be at the stage to eat them soon. I'm early in my search to find a dairy free brand. But also thinking about a dairy free recipe and making them at home and just freezing them in individual servings. Has anyone had luck with either?

As far as brands my usual go to brands earth's best has dairy in all 3 of these items so does whole food's 365 brand, so I need to check out more brands. It looks like amazon has some of these mini makers so if you have one and recommend your model that would be helpful.

We buy Vans waffles. I haven't tried any of their other products like pancakes. I just make my own.

We make pancakes with the Bisquick mix (read labels not all are dairy free) and sub almond milk for the milk in the recipe. You seriously can't tell the difference. They free really well so DH will make a big batch and it will last me about 2 weeks.
