We need a third veggie. In past years, we've done broccolini and we've done Brussels sprouts. This year I was thinking of something with butternut squash, maybe even a soup?
We are cooking for seven adults, two teenagers, and a toddler.
These are all fabulous! I do like the green veggie idea. I don't eat green bean casserole but I want something green! (Maybe even just a fresh green bean dish?)

We always have a green salad with our other veggies. And I love green bean casserole - but it HAS to be made with fresh green beans, not canned...BLEH!!
So it's super unhealthy but it's one of the most popular dishes in my family... Broccoli casserole. It's basically broccoli, velvetta and butter melted together and then baked with a ritz cracker topping. Seriously, it's amazing.

I always want something green to cut through all the heaviness though so I'd do a roasted brussels sprouts.
