Help me pick an easy dish for a pot luck

DS's prescool called to "remind" me about the parents meeting tomorrow and to not forget my cultural dish for the pot luck meal.

Gee thanks lady, that's exactly what I was looking forward to cooking for all the families in the school.....

Any-who now I need ideas on what to make. DS is half Dominican and half Irish. I need some ideas for what to bring that is relatively easy to make. Any takers?

    @jgslr I was planning on bringing a couple of pizzas but she was like "don't forget to bring a dish from DS CULTURE".....great. I asked DH what he thought and he suggested a shepherds pie, only because he wants some. I might actually go with that. That just leaves the Spanish food....

    Sounds like all you need some Stauffers Shepards Pie and some Rice a Roni ;)

    I'm half Mexican-American and my dad was Italian born and raised. DH is half Puerto Rican and with German ancestry..I think great gp lived there. So yeah....she's quite the mix!

    Irish and Dominican sounds like an awesome mix too!

    If we keep reproducing like this people won't know what anyone is lol.

    What about enchiladas? Instead of rolling them up you can just make it like a lasagna in layers and that way it will last longer.

    I don't even know what an enchilada is??? Is it like an empanada?
