Recipe: What to eat when you don't want to eat

MS has hit me this week and my body recoils at the thought of eating anything besides soup and carbs. As I don't want to live off bread for the next few weeks, I've pulled out a loved family recipe that is packed full of nutrients and is fully pureed so I can hide as many veggies as I want without my body realizing it. Kind of feel like I'm feeding a child! I thought I'd share it if anyone else is worried about not getting the right nutrients due to nausea. 

Winter Lentil Soup

250 grams brown lentils
1 large onion chopped
2 large stalks of celery
3 large carrots (or 5 small)
2 medium courgettes
½
  TBSP ground chili pepper (if desired)
½ TBSP cracked brown pepper
½ TBSP cumin
3.5 cups of chicken stock (or water if you prefer a healthier option)
¾ cups lemon juice
½ cup chopped cilantro
Salt to taste

Directions:

1.      Bring the lentils and the chicken stock to a boil. Add the celery, carrots, onions, and courgettes and any other veggies you want to add. You can add virtually anything. 

2.      When softened, puree with a hand processor in the pot or in a food processor/blender (if moving the soup to a blender make sure to let it cool first).

3.      When fully pureed, reheat and season with the spices and salt.

4.      10 minutes before serving, add the cilantro. 5 minutes before serving, add the lemon.

5.      Serve hot.
