Otherwise, I made tomato soup in the crockpot yesterday - adapted from skinnytaste - instead of adding a roux to thicken, I added a can of cannellini beans and pureed with my immersion blender. Delicious! That, plus salad stuff is the plan for the week. I need to lose the last of the baby weight, and DH could stand to lose a few, too.

Yes, I do! I got it from www.allrecipes.com. I tweaked it, but if you want the original recipe it's called "Easy Slow Cooker French Dip".
-4 lbs rump roast -2 cups beef broth -1 package Lipton's Dry Onion soup -1/2 cup red wine -sub buns or French rolls -butter for bread -provolone cheese -optional sautéed mushrooms and onions
Directions: Trim excess fat. Season the rump with garlic powder and pepper. Place the entire rump in the crockpot. Add beef broth, dry onion soup packet, and red wine. Cook on low for 6 hours. Take the entire rump out and then cut it up/shred it, and then put it back in the crockpot with the juices for 1 hour.

I'm going to girls weekend starting Thursday, so I'm planning meals this week that will work great as leftovers for DH and DS this weekend.
Monday - dinner at a friends house
Tuesday - pulled pork sandwiches
Wednesday - Pioneer Woman chicken spaghetti (freezer meal)

Making freezer meals are such a pain but they do last a long time & help stretch out the meals throughout the week...

-Hubby is making bean burritos! (and fruit and vegetable)
-Friday is take out!
