  • I'm going to girls weekend starting Thursday, so I'm planning meals this week that will work great as leftovers for DH and DS this weekend.

    Monday - dinner at a friends house

    Tuesday - pulled pork sandwiches

    Wednesday - Pioneer Woman chicken spaghetti (freezer meal)

    Thursday - chicken Caesar sandwiches. --- crock pot, super easy, and a family favorite

    Friday - Sunday - GIRLS WEEKEND!!!!!

  • @jlaOK - those chicken caesar sandwiches look fabulous.  I'm going to try those this week!

    Otherwise, I made tomato soup in the crockpot yesterday - adapted from skinnytaste - instead of adding a roux to thicken, I added a can of cannellini beans and pureed with my immersion blender.  Delicious!  That, plus salad stuff is the plan for the week.  I need to lose the last of the baby weight, and DH could stand to lose a few, too.
  • - pesto pasta & salad
    - chili (from the freezer)
    - panko breaded tilapia & oven fries
    - quiche (from the freezer) & fried potatoes

    Making freezer meals are such a pain but they do last a long time & help stretch out the meals throughout the week...

    So excited.  I prepped everything for the whole week last night!  (this never happens)
    Today - crockpot pot roast and barley  (freeze extras for beef stew)
    Tu- crockpot enchilada chicken (freeze extras for tortilla soup)
    W - out for a birthday diner
    Th - Meatloaf (already cooked just needs to be warmed) and butternut squash soup (squash already baked)
    F - Carolina ribs in the crock pot and cold barley-tomato-cucumber salad
    Sa - leftovers or spaghetti

    -Crockpot French Dip sandwiches with Au Jus! (and fruit and vegetable)

    -Hubby is making bean burritos! (and fruit and vegetable)

    -Friday is take out!

    Friday- JDH fends for himself- I have a late meeting

    Saturday/Sunday Potato Soup

    Monday - Pork chops with Rice and veggies

  • M- spaghetti
    T- chicken salad pita pockets, couscous w/grapes and feta
    W- homemade pizza, fruit
    Th- homemade soup, not sure what kind yet
    F- mac&cheese
    Sa- slow cooker pork tenderloin, veggie, baked sweet potatoes
    DS born 8/8/09 and DD born 6/12/12.
  • DH and I are staring a Whole 30 (paleo challenge today)

    Tonight - Chocolate Paleo Chili (leftovers for lunch tomorrow)

    Tues - Italian Pork Roast in crockpot with roasted broccoli

    Wed. - Paleo Pad Thai with shrimp

    Thurs - meat balls and zucchini soup

    Friday - "kitchen sink stirfry" (where I use up whatever veggies we have leftover + ground beef or chicken)

     

    What is paleo pad thai? We've gone primal but I love pad thai and would love a substitute recipe :)

    For us: 
    Monday/last night - home made herb rotisserie chicken & yams
    Tuesday - leftover lasagna (eggplant layers instead of noddles)
    Wednesday - leftover chicken topped with taco seasoning, cheese, and a side of kale chips
    Thursday - taco bowls
    Friday - cauliflower base pesto pizza with veggie toppings

  • I wish I could get it together to be more of a planner.

    Last night: Falafel wraps (kids ate soup)

    Tues - Black bean quesadillas

    Wed - breakfast burritos

    Thurs - ???

    Friday - pizza maybe?

    I am certain there will be a pasta meal in there someplace.

    Yes, I do!  I got it from www.allrecipes.com.  I tweaked it, but if you want the original recipe it's called "Easy Slow Cooker French Dip".

    -4 lbs rump roast
    -2 cups beef broth
    -1 package Lipton's Dry Onion soup
    -1/2 cup red wine
    -sub buns or French rolls
    -butter for bread
    -provolone cheese
    -optional sautéed mushrooms and onions

    Directions:
    Trim excess fat. Season the rump with garlic powder and pepper.  Place the entire rump in the crockpot. Add beef broth, dry onion soup packet, and red wine. Cook on low for 6 hours.  Take the entire rump out and then cut it up/shred it, and then put it back in the crockpot with the juices for 1 hour.

    Serve on bread/rolls, use sauce for dipping.
