Vegetables are things that either grow in the ground or you eat the leaves and don't have seeds inside. Fruit generally grow above the ground and have seeds on the inside. Exception: strawberries.

Also, vegetables tend to start out with a higher sugar level and it gets lower as they age (see baby kale). Fruit are the opposite and are sweeter as they ripen.

We spent like most of a day discussing this at work a couple weeks ago.
