Meal plans?

What are you having for dinner this week? We are going to shop after the nap and I have no idea. I just know tonight will star an apple pie since we picked apples yesterday.

  • Here's mine even though I am only talking to myself. 

     Pork chops with applesauce and something green
    eggplant rolls, which may become lasagna because it's easier to layer than roll with salad and homemade no kneed bread
    brats with apples and kraut with pumpernickel...I am going to try to make my first ever pumpernickel, we shall see.

  • Urghh I haven't thought about a meal plan for the week yet. FIL is in town till Tuesday morning so it will be a short week of meals at home for us and i won't make it to the store until Tuesday. We very rarely cook when he is here. He thinks it takes up too much time to cook and clean up when we should be spending time enjoying being together so we eat out/order in about 90% of the time he is here.

  • Hubs starts night cycle on Wednesday, so I only have a few night to worry about. Tonight is a big pot of sauce, meatballs, sausage , with homemade wheat pasta, salad and bread. And wine! 2 other couples are coming over, one is bringing dessert. Tomorrow will be my old standby, wheat toast with light cream cheese, carmelized onions, smoked salmon and a poached egg, arugula salad on the side. Tuesday will be pork chops with the homemade applesauce from apple picking yesterday, and something??? Then me and the baby fend for ourselves for 4 nights. My standards for what constitutes "dinner" lower dramatically when DH is not here.

    Here's our play!

    Meal #1: Enchiladas (in the freezer - I rolled extra and froze one pan last time) with Mexican rice

    Meal #2: Sausage-and-rice stuffed acorn squash with corn on the cob (the corn is on the side, obviously)

    Meal #3: Roasted turkey breast with sage carrots and dinner rolls

    Meal #4: Grilled turkey and Swiss sandwiches with poblano-tomato soup (leftover turkey)

    Meal #5: Turkey pot pie (leftover turkey) with biscuit topping and side salads

    Meijer had great meat sales this week, so I also got split chicken breasts, ground beef, a whole chicken, and steak, all for next week.

    Your plan sounds fabulous. I keep saying I want to try a stuffed squash but always forget when the time comes to meal plan.

  • Monday - pesto orecchettie with chicken sausage

    Tuesday - homemade chicken noodle soup, which I made tonight.

    Wednesday - crockpot short ribs, rice and salad

    Thursday - quinoa stuffed peppers and salad

    Friday - chicken cobb salads

  • Mine isn't set in stone, yet. I'll be getting it all finalized this morning.

    Monday: stuffed peppers

    Tuesday: meat loaf, corn, sweet potato side of some sort

    Wednesday: Lasagna, garlic bread, some sort of vegetable side dish

    Thursday: Leftovers

    Friday: An undecided crock pot soup and beer bread

    Saturday: Leftover soup

    Sunday: Grilled steak and chicken kabobs

  • I recommend Toaster Strudels for breakfast. My dads the inventor.
  • Yum!  It's 9am here and now I want dinner!

    Monday: rotissere chicken w/baked potatoes and steamed veggies

    Tuesday: Brats and grilled veggies

    Wednesday: Turkey burgers and a salad (peas for DS)

    Thursday: crock-pot beef stroganoff

    Friday: spaghetti?

    And at some point I want to make a couple pans of lasagna.  Our neighbor just had a baby a week and a half ago, so I want to bring a pan over for them.

  • lately i've been trying to make a bunch of food over the weekends so we have leftovers ready for lunches and dinners. in the fridge i have some vegetarian chili, potatoes with cheese sauce, hard boiled eggs (maybe for egg salad), sauteed mushrooms and onions to have with trader joe's portobello ravioli, and leftover whole wheat pasta with lentil and tomato sauce. that should get us through the first part of the week, and then i go to the farmer's market on wednesdays during my lunch break, and the supermarket on thursdays, so i should be able to restock then.
  • Alright, I've got mine done up until Sunday!

    Monday: lime shrimp tacos with black beans
    Tuesday: stuffed shells
    Wednesday: out for dinner
    Thursday: cheesy chicken and broccoli over rice
    Friday: grilled chicken salads
    Saturday: leftovers
    Sunday: pasta and meatballs

  • late to the game -

    Mon - going to see my Mom so leftover roast pork and sauteed veggies

    Tues - Stuffed spaghetti squash with suasage and peppers and a side of corn

    Wed - veggie chili

    Thur - fresh trout, brussel sprouts and mac n chese (I am hoping rice, but we shall see)

    Fri - Roasted winter squash soup (probably just acorn and butternut as I think that will be all I have on hand) and small salad

    Sat - we are going to my BFF's LO's 1st birthday party and we will end up staying to help clean up and probably order pizza

    Sun - Mozzarella, tomator and basil salad, fresh bread and chicken fettucine alfredo with broccili.
