Vegetables

What veggies will your kids eat solo and how do you prepare them?   Bryson hates everything green except sweet peas and really, the only other veggies he'll willingly eat are carrots and corn.  He won't eat my carrots, though. He'll only eat them at school, where I assume they use a lot of butter, etc.  We're healthy eaters and don't use a lot of butter, sugar, etc.  I really have no idea how to cook outside of that, so I don't know how to make them more edible for him.  I have to get creative and mix his veggies in smoothies, pasta sauces and meatballs.  Please give me some recommendations!

  • Riley is also getting picky about her veggies. She loves carrots and corn (we also don't put butter or anything on them) by themselves and doesn't even mind them cold. I've found if I sneak veggies like broccoli, green beans and cauliflower into some mac and cheese she'll gobble just about anything up. We also put spinach into scrambled eggs and she loved that too. HTH!
    mac 'n' cheese is smart.  I hadn't thought about that.

  • @amilyn9785 honey on carrots is a good idea!  I have to make some meatballs soon, so I was going to try zucchini.  Did you save any for later, or did you use up the batch immediately?  I usually make a double batch so I can freeze some and am wondering how the zucchini will hold up.  Yes, we do smoothies with kale, green beans and carrots hidden in yogurt and fruit, but he won't drink much.  Butthead.

  • @roo1582 Yup, I've tried quesadillas.  He pulls them apart and eats the wrap, cheese and meat, but leaves the veggies.   X(

  •  She likes black beans, peas, green beans, and lentils.  She likes them as finger foods.

    Have you tried butternut squash and sweet potato.  A lot of kids like these because they are sweeter.

  • My kids love plain broccoli, corn and peas. Also scrambled eggs with chopped spinach. Anything else is a hit or miss. I don't add anything to their veggies, but if we eat out they will eat them with seasonings, butter, etc.
  • I season veggies I steam, but that doesn't work.  I hadn't thought of trying eggplant because I hate it.  Maybe he'll like it.  Good call.  In typing below, now I'm thinking maybe a lot of his issue isn't taste, but texture.  That's my problem with a lot of food.

    @APendola I forgot he loves black beans, so those are a staple.  He used to love sweet potatoes, but doesn't like the texture of them now.  I will try butternut squash.  Perfect timing for that!

    Most things she will at least nibble on if I put it on a fork or spoon.  She tries to do it herself and gets frustrated, but if I help she will eat a little.  I wish I had more advice, but these days the dogs eat more veggies than Lillian because she chucks them onto the floor.
    Yup, that's us too.  Bryson thinks it's hilarious when one of the dogs eats from his hands.

  • My LO is has become picky so we have trouble with veggies. She used to love sweet potato, squash, and peas but now she refuses them.  She will eat broccoli and cauliflower but not all the time.  I try to hid stuff in  quesadillas but she picks it out.  She loves muffins and eggs for breakfast so my new plan is to hid more veggies in those.  I wish I had more advice!

    Well, Callen used to eat broccoli, green beans, and plain bell pepper. But he's currently on a veggie strike and will only eat steamed carrots (i don't add anything to them). He never was big on corn.

    The only thing I add a tiny amount of butter to is the broccoli, otherwise everything he gets is plain.

  • I can sneak in some veggies by blending with salsa or tomato sauce and cheese.  For example, the other day I mixed quinoa, sweet potato, lentils, mild salsa, and cheddar.  She liked it.
     
    You could also mix in something sweet...ie. mash sweet potato with carrots and apple...even add an extra touch of something like maple syrup to help the veggies go down.

  • I have to mix it into saucy stuff. Like Mac and cheese or pasta. She likes beans! So that one is easy.

  • I just throw some broccoli, mushrooms, and diced up squash into a pan with a little butter and he seems to like it served most ways, sometimes even by itself. He really likes it with yellow rice, in an omelet, with some pasta and sauce, or in a quesadilla or grilled cheese sandwich.

    I also dice up some spinach and add it to his grilled cheese sandwiches, quesadillas and eggs.

    The only veggie he willingly eats by itself is sweet peas just like B.

  • Kids need the fats for their little brains. A little olive oil or smart balance won't hurt them :)

    Hunter eats green beans, peas, carrots, corn, sweet potato baked fries, broccoli, cherry tomatoes and salad. Yes. Salad. Romaine lettuce with ginger dressing was a big hit last night. I steam the veggies and add a bit of dairy free butter. Sometimes a sprinkle of garlic salt too.

  • Emily's absolute favorite dinner is whole wheat penne with asparagus and balsamic butter sauce. She would eat the whole pan if I let her! She also loves Lima beans and surprisingly, she'll eat baby spinach leaves with a tiny bit of ranch on them. I think it helps a lot that Ben eats these things and she wants to do anything he does!

    I do olive and coconut oil, but I don't like artificial butter/margarine products, so they're used sparingly.  I do use Smart Balance when I use it, though. :)

    I'm impressed he'll eat salad.  I've tried romaine and I think B is already plotting to send me to a home for torturing him.

  • @nesenotes Hunter loves salad. I was a little weirded out to give him lettuce but he loves it. He likes balsamic vinaigrette and ginger and ranch lol. He also eats raw carrots. Be amazed ;)

  • I can't hide foods in anything with my guy - he figures me out right away.  He is also very picky about textures.  I found that he does GREAT with broccoli and zucchini if I steam and puree it.  He self feeds almost everything else, but I will feed him green veggies any way he will take them.
