meal ideas

I am getting so bored meal planning and I am not much of a cook. I can do the basics. I dont really like seafood. Just looking for some ideas and also am wondering what ppl are cooking/eating during the work week thats manageable,etc. I know a crockpot is a great idea but how about some other rec's? TIA

    I do most of my cooking in the evening after my son goes to bed - makes it much easier without the pressure of "eat! eat!" in my ear.  This week our meals look like:
    Sunday: chicken tamales
    Monday: short rib tamales
    Tuesday: pancit
    Wednesday: double stuffed potatoes
    Thursday: pumpkin penne
    Friday: pappas rellenos

    We eat a lot of salads. I prep during the day when I get free time.
    I usually marinate chicken or do taco meat ahead of time.
    I think grocery shopping and meal planning on the weekend is key
