Breadmakers Come In...

Ok this may be the stupidest question ever...I am interested in learning how to make my own bread.  I've never done it before..but I found this recipe:

Now my questions are: What is bread flour?  haha.  That's the stupid one.  Can I use regular flour?  A mix of regular and wheat flour?  Do I HAVE to use bread flour?

Also, if a recipe says use a bread machine..can I bake it in the oven?  I don't know that I want to invest in a bread machine if I only bake bread 1 time.

  • I'm pretty sure in the U.S. bread flour is different from all-purpose (in Canada we use all-purpose for bread). Usually bread machine recipes can be removed from the machine after rising and baked in the oven, but since the ingredients are tailored for the kneading and rising that happens in a bread machine, I wouldn't use a bread machine recipe without a machine. There are tons of recipes that don't use bread machines online.

  • Google bread flour.  You can make it using gluten and flour.  I would look for a recipe that takes all purpose flour and that doesn't need a bread machine.

  • That recipe is pretty similar to the bread that I make and I use all purpose flour. I don't have a bread machine either.

  • Use a non-bread machine recipe. Use bread flour if you can, but I've used regular flour before, the bread is just more dense. I got a never-used bread maker on craigslist for $15 and I love it. I've used it many times. My only gripe is that it takes up a lot of room and when I get busy I don't use it as much. To me, baking bread without a breadmaker is way too time consuming to do very often, so I knew that if I started that way I would surely stop.

    This is the best bread recipe ever!!! I make it all the time, and give it as gifts. People love it! My husband always asks me to make it. You do need a Dutch oven. It's a very simple recipe. Easy to read, and the comments at the bottom help if you're having questions.

  • Bread flour has more gluten than all-purpose. Both will work, you will just get a different result.

    My favorite bread recipes are in Artisan Bread in 5 Minutes a Day. I think there are now at least 3 books in the series. It's a great concept -- you make a huge batch of dough ahead of time, and when you are ready to bake you just pull out a chunk of dough, shape it, let it rise a bit and pop it in the oven. The dough is a bit on the wet side so a bit tricky to work with until you get used to it. A batch of dough is good for 3-4 loaves over a week to 10 days. You can make boules and loaves and baguettes and pizza from the same basic mixture.
