Buttercream Frosting

Sorry for the delay.  @melody921 & @AndreaR1983 here's the recipe.  It's been sitting on my desk for a week.  Sorry it took this long!

2/3c sugar

1/4c flour

1/4 tsp salt

3/4 c milk

1/2lb butter at room temperature

1 tsp vanilla

Measure first 3 ingredients in saucepan

stir in milk until smooth

Place over medium heat and cook until thick. 

Cool for approximately 20-30 minutes

Beat in butter with electric mixer 2tbls at a time (8-10 minutes)

It is literally the best frosting I've ever had.  It's not too sweet, it's just perfect.  :-)

    If you're going to add in food coloring, you want to do it while you're beating in the butter, around 1/2 way through.

  • @MarisaKathleen: I made this over the weekend and it tasted delicious. But, one question -- should I be able to decorate with it? If so, I did something wrong bc it was too soft to hold it's shae when piped.

    Was it cold? I can only ever pipe frosting after it has been in the fridge for a bit.

  • 1. I made a double batch and was able to frost 40 cupcakes with a pastry bag, however if I had just used a knife and not done something fancy, it would have been more.

    2. Yes, you should be able to decorate with it.  I just used a wide tip and did a swirl a la Sprinkles cupcakes. 

    3. You don't want it to sit in the fridge.  I leave mine cool on the counter for an hour or so (after transferring it to the bowl i'm going to whip the butter in with, then I whip the butter in 2-3 tbsp at a time.  Also, make sure you leave your butter out like overnight so it's super soft.  I've noticed that for some reason that makes a big difference.  And it should take you a good 15 minutes or so to beat in all the butter.  With 2 batches it took me almost a half hour.

    Also, I learned this weekend you should really use a stand mixer or something else and not a stick blender with the whisk attachment.  I thought I was going to burn the motor out on my poor little thing.

    I'm not sure why it didn't set up for you, but I'm really glad you enjoyed it!  It was a hit at our party too!

  • @Stasi if you have a Mariano's near you, they did DDs personal/smash cake for me for $10 and it was DEELISH and customized with Hello Kitty on the top and her name around the side.  I then made cupcakes and a hello kitty cake myself to save money.  Just thought if you wanted to get Kate's cake professional it's a great option.
