Birthday party!
We went the super-simple route (which never ends up being as simple as it should be). So we did sandwiches, fruit, and chips at the park so I wouldn't have to deal with cleaning the house, and there was built-in entertainment for the kids with the playground right there. It was a surprisingly unbusy day at the park, so it was nice and quiet for us.
I attempted a superhero theme - if we had had it at home, there would have been more decorations. Instead, I just had the superhero capes I made for favors and the attempted superhero crest on the cake. (I did it with sugar sheets - just cut the design out. It was pretty easy, but not as fabulous as it looked in my head.) Blue cake icing seemed "fun" when I came up with the idea....and then I realized all of the kids would be wearing it. DS and the other almost-2-year-old were the only two kids who were practically smurfs by the time they finished their cake. The look of sheer joy on his frosting-covered face is priceless, though. At least the blue didn't stain anything.
DS FINALLY got the hang of opening presents (I mean, Christmas was a long time ago, and we haven't been to any parties for him to learn how to rip paper), and then the party was pretty much over as soon as he opened the Jake and the Neverland Pirates Bucky that DH bought. All of the kids swarmed around it and stopped paying attention to anything else.
It was a fun day, and I'm glad we kept it small.

I had planned to use a cookie cutter to make stars, but then changed my design idea. I just free-handed with a paring knife. The edges were really rough, so I'm glad you mentioned you had trouble with the cookie cutter - I kept thinking "what if?" about my original plan.
