My Lo is 7 months and he is used to regularly riding for 2 hours in the car as I have to go back and forth from two states for work weekly.
Next week we are driving 7 hours to Florida and I am curious if anyone has any suggestions/recommendations. Did you stop mid way and spend the night or just stretch legs and play every 2/3 hours?
We are also taking our dog so its not like we can just stop and stay anywhere, we need to plan that ahead if its the case.
Also, our night time schedule has finally gotten pretty steady and Im pretty terrified what vacation might do for our schedule. We are taking the pack and play to act as his crib and he will be in the same room with me and my DH but how did your babies do with sleeping in a new room, etc. for a week?

Neither of my guys have ever had issues with sleeping in a PNP or a different room.
We take a 12-14 hour trip 1-2 times a year. We drive overnight. Usually the kids sleep most of the way, we stop midway to get them out of the car, stretch and change. If they are sleeping during the other stops, we let them keep sleeping. We also usually stop a couple hours out from our destination to have breakfast at a cracker barrel...good food and walking around the country store is a nice little break. Good luck!
We've only gone on 1 vacation when DS was 6m. It was going to be a 6-7 hr drive, and we ended up deciding to break the trip in 2 days, and stopped overnight at our ILs both ways. It added more time to our trip but then ILs got to see DS.
As for sleeping in a new place, DS had no trouble with it at all, to our surprise. I was nervous like you as well (he was STTN at home). Since DS had never slept in his PnP before, I ended up putting him in his PnP for naps for 3-4 days before our trip. We used our PnP at my ILs, but we used the hotel PnP when we reached our destination (we used our own PnP sheet hoping that it would smell familiar). We did our usual routine, but of course that was a bit different b/c of the surroundings, and DS continued to STTN while we were away for 4 nights.

I'm a horror story with sleep. We are on vacation this week. DD was up all night the first night, I had to hold her. The second night she was up every hour, sometimes sooner. Last night she was up three times. And she is getting up at 6, an hour earlier. DD1 was worse, I dead traveling and am always exhausted. My girls are also pretty bad sleepers overall though. Hopefully you have better luck.
He didn't do well overnight on any of the trips that he's been on, but I think thats because there was a lot he wasn't used to. He has dark curtains at home so when he saw light at 6 am he was ready to play, it was colder then his nursery usually is etc. Try to keep things as close to normal as possible with bedtime.
