If you do have all 3 kids, I would definitely fly, not drive. Dealing with 3 kiddos in the airport and on the plane won't be easy, but at least you won't have to try and focus on the road at the same time. Plus I'm sure you will be able to get help from airline employees.

I think they would sit with them, but you never know. Last time we did this same trip Evan drove the whole way and I sat in the third row helping the boys. Jack was 4 months and Liam was just under 3. It wasn't that bad sitting with the kids.

I wasn't very clear with this. Tickets from where we are to grand cayman are roughly 900 each. Tickets from Tampa to Grand Cayman are much cheaper and the passport lines are much more hassle free because Cayman Airways runs out of Tampa. Cayman Airways has their own immigration line at the airport and its really short. Flying Delta or other various airlines, once you arrive in Cayman you have to wait about an hour to be approved in customs and grab your luggage. The tickets from Tampa to Cayman are roughly 200 each. We did this same trip two years ago and it cost roughly 70 for a hotel room for the night plus we could leave our car there and they shuttled us to the airport for free.
There are usually cheap flights from where we are to Tampa. Not around Christmas, the tickets can be purchased for as little as 100 each. If I keep looking I might find cheap tickets last minute.
It's an expensive trip but I don't pay for it. My dad wants to save travel expenses, it's not on my dollar so I go with it. DH and I haven't been anywhere besides this trip in 3 years because he's been in school and we can't swing a vacay. Buying tickets for the entire family is a huge part of the expense. We have 6 adults and the two kids total, we only pay taxes for the baby to fly. At tickets just under a thousand each they'd rather have all of us drive to a Cayman Airways location.

I'd make it work in some way to take the extra week's vacation. I'd probably try some combination of Crash's suggestion and/or your option #2 to fly.
